Baking Bread on a Campfire & Overnight Camp at Cabin Build Site

There’s nothing like fresh baked bread! I’m sharing with you a very simple bread recipe you can make at home or at camp.
You’ll need:
4 cups all purpose flour
2 teaspoons instant yeast
2 teaspoons kosher salt
1.5 - 2 cups water
1 tablespoon extra virgin olive oil
parchment paper
cast iron pan/dutch oven
Combine 3 cups flour, yeast and salt. Gradually add in water and oil. Mix until well combined. You want the dough to be sticky and smooth, not watery. If you’ve added too much water it will pool at the bottom (just pour out excess or add some more flour). Cover and let sit a room temperature for about 1-2 hours until the dough has doubled in size.
Generously coat the dough with flour and work it into a ball and place on a large piece of parchment paper.
Campfire: build up your fire with some hot coals, ideally try to use hard woods and bigger logs to get a roaring fire. Make sure the fire has simmered down, ideally no more flames and just glowing coals. Place your dough on some parchment paper and place in a cast iron dutch oven or pan. Place some hot coals on top to make sure the bread cooks evenly. Watch that bread like a hawk! Coals are HOT! Regularly check the bread, once browned, remove from heat and assess. If burning or browning too quickly, push coals away and keep checking until you get the desired tastiness.
Conventional Over: Preheat oven to 450 degrees F and place an empty cast iron dutch oven in oven to warm for 30 min. Carefully remove hot dutch oven and place the dough on the parchment paper into the pot. Transfer back to oven and cook covered for 30 minutes. Carefully remove life and continue baking for an additional 10-15 min until bread is golden brown. Remove from oven and cool. Voila!

It always amazes me that no matter how much roughing it in the woods, there's no roughing it when it comes to mealtime. There always seems to be a gourmet meal involved. That is some seriously good food you cooked there my friends. That baratta and tomato on that fresh baked bread was stellar. Both of you truly know how to enjoy the outdoors and appreciate each other too. Always love your videos.

Baking is difficult, baking out in the woods is more difficult. I love the idea of the clear lid. I can hardly make bread in a kitchen. Yours turned out great and the lunch looked delicious

Thanks for the flash back of our project 41 years ago, it was going to be a cabin but a 3 kids later and good life we are still living in the same log house. The sound of the knife sawing the bread is still familiar as we cook our sour dough in Dutch ovens almost daily but in a cookstove. Enjoy.

FYI once you filter one cup of coffee, take the filter and put in cup #2 and re pour the coffee in cup #1 back into filter in cup #2. Your coffee strength will double and you'll have some strong delicious coffee. Just don't crash.

i somehow feel a great sense of calm when i see the forest background and the sun light in this video.
An alternative to bread, is my quickie cornbread, or hoe cakes. Mix 2 parts corn meal to 1 part "Just add water" pancake mix, plus a little salt and enough water to form a thick batter. The wheat gluten in the instant pancake mix serves as the binder for the corn meal and it's self rising. You can cook it like cornbread of skillet fry like a pancake. You can add lots of chopped onions and make onion patties that taste just like onion rings.

Took me two tries on the bread. First time my yeast was old and had no Kosher salt so used table salt. Bread was too salty and obvious lack of yeast work. Second time got fresh yeast packet and Kosher salt. Used like a teaspoon and a little more than a half. I was using the Dutch oven in a conventional oven and probably baked a bit too long as had a pretty rough crust. Bread was delicious though and shared with camp friends. I will get better at this great bread! Thank you!

Ok for some unknown reason this popped up on my recommendations.......so glad it did since I'm just now learning baking/cooking over coals with a cast iron Dutch Oven........ahhhhhh.....there is nothing like the smell of that fresh baked bread. Delicious !! Great job on the Log Cabin build , my Wife and I are currently cutting and drying timber for our off grid build.....( youtube recommendations is in my head huh ) .
