Today I am prepping food to start the week off. I try to keep some ingredients prepped and ready to make meals quick and easy. This is a typical kind of prep that I keep on hand.

My name is Scott and in 2015, I bought a Ram ProMaster City to live in. Even though I didn’t know much about RV’s and campervans, I set about building the van out as a minivan camper. And in April of 2016, I moved into my minivan full time.
Over the years, I’ve learned you don’t need to have a big skill set to build your own campervan. And that living as a minimalist and utilizing solar power can be a less expensive way to live. I’ve also learned that a minivan can be a very comfortable home.
Please follow along as I document my journey.

That salt lamp is just out there, living its best life…basking in the sun! ☀️😁👍🏻
The salt lamp got a good soaking in the rain the other day, too
@@StaticCamperVan, well, you’ve gotta have a little rain if you’re going to enjoy the sun! ☔️🌦️🌈☀️
Your diet is so important. What blows my mind is how much sugar they put in everything. I stopped getting processed food years ago and I feel so much better.
Glad you are taking care of yourself Scott.
Another informative episode of cooking with Scott. Those tacos looked and sounded superb.
As always, Thumbs up!😎👍
Hi Scott!! When I hear Manage from a doctor instead of reverse/cure/prevent, I run in the other direction! 😁
You have so many good ideas and practices. I'm going to try frying my finished tacos...love the crunch. Thanks for the video update ~
Enjoy!
Hello Scott, Love watching you meal prep. You have the smoothest narriatives. You have a system for everything you do. So authentic and transparent. Don't see enough of that on you tube because so many channel owners glamorize van life. It's hard sometimes to find small packages of meat. If I go directly to a meat market I can buy portion sizes. I find that switching out deli and bakery items helps eliminate appetite fatigue. I like to cook outside the van when I can find a park with a pavilion. Enjoy.
Loved that outgoing CRUNCH! Appreciate the update. 😊
AKA secrets to becoming a great chef :)
Those tacos sound and look great! I'm glad you are able to keep your health issues under control with your diet.🥔🌮👍
Okay, tomorrow is Taco Tuesday! 🎉🎉🎉Those tacos look delicioso! 🌮🌮🌮 You made your tiny kitchenette and financial budget to support good health. That is difficult to do but achievable as you are proof. I am encouraged.
Easy to see you have nice chef-like skills. I enjoy your cooking videos. Have a great day, Scott, and be safe!
I very much admire that you seem to find pleasure in the little things.
So nice to see you!❤ Glad you found a good Doctor! Food is Medicine! Your rich if you have your health! 🙏🏻
I grew up not far from Olvera Street and really enjoyed the Taco stands there regularly, food was delicious , but it looks like you've made yourself some tasty Tacos yourself 👍 always enjoy your cooking segments😊
Olvera Street is such a great place
@@StaticCamperVan ... yeah, just don't use the public bathroom! It was BRUTAL!!!! LOL
Good day static. I also food prep and taught my kids to do the same. It helps me to eat a bit healthier.
🌄☕🌮Enjoy so much your cooking programs of van life. Your not being in a hurry up rush reminds me that its fine to take my time... My son is like that and I find our cooking times together more so enjoyable. I do the prepping and thankfully he then takes over giving my health recovery a boost. 🌮☕🌄
I'm with you on the mandoline. I do have one. For slaws, salads and especially kimchi veggies it is so quick and produces very consistent delicate thin slices. But terrifying to use and clean😁
You’re right. Some of the best tacos etc was a taco cart on the sidewalk in that area. Mmm I’m hungry now
Always love your meals and how you like to be frugal
I got the pink version of your knife after you mentioned it in an older video. I love that thing! It’s pretty much the only knife I ever use now. 👍🏻
Do you have a Link for that knife?
Looking good and healthy , Im working on lowering my bp and cholesterol while cooking in my van and yes eating healthy is expensive $6 for a dozen of organic eggs, yum❤ I'm enjoying your videos, I fell asleep to the rainforest❤
Hi Scott, I attach my cordless drill onto the crank shaft of my bean grinder rather than use the manual crank handle. It's a lot quicker, easier and effortless. You may want to give it a try.
The coffee grinder I have is so effortless there isn’t a need to add a motor.
My coffee grinder is effortless also. It just takes too long to fully complete the grinding process. And when I want my coffee, I want it now. Have a good one. 😊
I hit the screen to see the time stamp and was pleasantly surprised that I still had more than half of your video to go. The tacos look awesome. I’m keeping your method for crisping/heating up the tacos in mind for the next time I make some for myself. Thanks!
👍🏼
I just found your channel yesterday and have not had a chance to watch very many of your videos but just wanted to say thanks for sharing your experience living in a van. I'm in the process of designing my minivan conversion for occasional camping (not to live in). Anyway, learning a lot from your experiences and developing a great respect for your perseverance. I'm sure you are helping many others who also live in a van regardless of choice or necessity.
Thank you
One thing people don't know is that without a diagnosis the patient doesn't know what to do ( and neither does the doctor) . I think it is a talent that not all doctors have. Finding the doctor with the talent is difficult. My SIL is a retired internist and she really could figure things out. She literally saved the lives of some of my family because she could spot what was wrong. I have another friend with chronic debilitating fatigue. He's been tested for everything, Covid, Lymes' Disease, AIDS, allergies, mold, parasites etc. . His doctor of 30 years is totally mystified as to what is wrong with him.
This was one of your greatest hits!!! ❤
Thanks Lee
Tacos look super yummy, its better to do your own cooking anyway and more affordable usually. Im super glad a Dr finally got your health figured out but dang that was way too long to diagnose for ya. I need to be changing my diet I know but it'll be rough 😂. Great video Scott, as always 🙋♀️♥️
Food safety is paramount! I took and passed the Serve Safe course 2 times!
Oh yes. Its got to be a crispy taco😊😊
I need to look for those tortillas the next time I'm at Trader Joe's. I'm allergic to all sorts of ingredients and need to start paying closer attention to ingredient lists. I've recently discovered that red food color, which is in so many products, triggers bad inflammation in my back. It's just trial and error for me. You are fortunate to have found a doctor to help guide you to the proper diet.
Hi Scott,
Your tacos look really scrumptious! Without good health, life can be somewhat not so enjoyable. I am happy to hear you found a doc who was able to help you. Thank you for your channel!🇺🇸
I use the same brand of olive oil!
Peanut butter might come in handy, too, if you. just need to scoop something into you or spread it on bread--to eat something fast if you're too tired or unwell to cook. Lots of protein, fat, and sugar. I'm amazed at how well you can cook in your van. God bless you, Scott. Stay well and safe.
That was very fun. Thank you.
First time I see your Chanel and I like it, Greeting from NJ
Another great video Scott! Thanks for taking us into your meal making!
I have to diagnose my own health problems because, like you said. Doctors just want give you a pill. I hope you continue to feel well!
Those tacos look super good!!! When I buy taco shells at the store already shaped, that must be an imitation of the way you made crisp tacos. I’ve never thought of making a soft shell crispy. I’ll have to try it.
Having IBS I completely understand about diets and not eating out much. Loved your video.
Today is the first time in quite a few months I've watched a current show. your voice has a very calming effect on me so I look for an episode to help me sleep. I usually see most of it before... Sleep. Thank you!
Thanks Diane
❤ Good Evening 🌆🌃 Scott! Those Red potatoes are awesome 👍 nice& lite, not to starchy 😋 Potatoes are good to eat at night 👍They make you relax, sleep 😴 I guess it's the Potassium in them!🤞✌️🙌🙏✝️🇺🇸🌻
Your chef knife is with your fork... hee!
Haha, probably
Vinegar is an antibacterial but not an anti viral. You need alcohol for that
Awesome !!
I just discovered your channel. I watch a lot of van life channels and have never come across any from someone staying in the SF Bay Area so I was thrilled to see you are in Santa Rosa. I live in the East Bay (about 30 miles east of SF) and love Santa Rosa. Wish I could afford to live there! Those tacos look fantastic, and that crunch, oh my! Great video, thanks for sharing a day in your van life. I look forward to following your journey.
Awesome you found that good doctor and have found your food plan works for you. Can't beat that. The shaved beef looks droolicious! Stay well. I appreciate your videos.👍😎🇨🇦
Better than what we had.
Hebrew National beef franks and sliced veggie platter with buttermilk ranch. Couple bites of Tillamook Vanilla for dessert 🍨.
We will finally reach home tomorrow after a couple months in the TC.
Take care.
11:10 have a lot of [obscure] food allergies as well and am on a specific diet plan for medical reasons as well, lots of random ingredients never even think about.
That was supposed to say “lots of random ingredients THAT MOST PEOPLE never think about
Not sure what happened there, I must have gotten distracted.
I have an auto immune disease and have a prescription diet. I wouldn’t mind you doing a video getting more into detail about that diet and your condition if that’s what you would like to do.
That isn’t a video topic that I would cover since my health issues are my own and require specific treatment prescribed to me
Have you thought of shopping at Aldi? It’s like Trader Joe’s owned by the same company great prices and mostly quality stuff
There aren’t any Aldi locations in my regular areas
Its something special to find a doctor who thinks outside of the pill box.
Hey Scott thanks for the video and prep xxx😊
Really enjoyed. Great tip about how to get the tortilla not to crack and crumble.
YUM!!!!!
Awesome video
A good doctor wants to cure over repeat visits .. a good bloke 👍
Hi Scott- thank you for the food prep video❤ i try to food prep but it is difficult with a small fridge- mine is a smaller refrigerator but not as small as yours. Tortillas make a quicker meal if my beans are already made.
I use a small rice cooker which helps because i can prep veges while it's going. But rice cooking is not fast.
Not sure why potatoes only keep for a couple of days- i keep them longer in olive oil. Sometimes i put vinegar in with the oil and use as a cold dish.
Those tacos sound yummy.
Love Your show seems to make Me relax Thank You
Thanks for leaving a nice and encouraging comment for me to read
Yes yes to crispy tacos 🌮. Wow you are really living your best life
You’re doing a very good job. You look very healthy! 🙂
Yeah, I've notice that you never eat peanut butter, allergic ? I agree, the shorter the ingredient list the better which helps to avoid any side effects. TJ stores, for the most part, are health conscious, the exception is their chip, alcohol and sweet-tooth sections. And there's a YT video by the late Huel Howser of Calif. Gold fame, on Olvera St. if you care to revisit.....Take care and enjoy your eats !!
I actually do eat peanut butter occasionally. But I’m not supposed to
I was prepping my burrito/taco mix when I put on this video. Roast up some corn, add onions, some chorizo, salt, pepper, garlic powder, tomato chipotle sauce, ground beef, dehydrated pinto beans (that soak up the fat), dehydrated hash browns (that also soak up the fat). I eat it almost every day, sometimes scrambled into some eggs for breakfast. Yeah, taking the time to prep things in advance makes meals much easier. And I chuckled when you talked about the knife. I had been thinking, "He used to cook for a living. Why doesn't he use a chef's knife for, like, everything?"
I like your van cooking tips in tight spaces, if I get a bigger vehicle i will have a sink with a cover to give me more bench space
Hi scott great video I always say you're a good cook would it be easier to prep a few burger Patty's ahead? Thanks for sharing
It’s a good guess that burgers are your favorite
Great tacos!! Chicken or shrimp would work, too!! Yum
Not for me thanks!
I also have big issue with how they deal with medicine in this country. Really bad luck with my doctors also for years.
Looks yummy ❤
I haven't been to a Trader Joe's in a long time. The shredded beef looked good. I'll have to go to Trader Joe's and get some to try out. Thanks for sharing. 😊
So glad you found a doctor who helped you stay healthy. I really appreciate your videos and your humor. Some of your expressions like "yappin away" make me laugh out loud😂 Did you put Yellow Bird on those crunchy tacos?
Hi, I live in Southern California and I just left Walmart and they had a big bend with 2.2 oz little bottles of hot sauce for a dollar a piece. They had Yellow Bird also. 2 different kinds. I bought my husband one to try. Maybe Walmart out there has them also.
Some but not all Walmarts carry Yellowbird. I hope your husband enjoys it
I had a mandolin i cut my finger it wouldn’t stop bleeding for a couple hours,I threw it out.
Sorry! Yes, I’ve done the same many many times
Great to see this video tonight
Hope all is well in Northern CA
Best wishes to you ~
Doing well, thanks
Hello, from Saudi Arabia. I’m actually Mexican American been living out here since 2001. I was on CZcams looking for some Santa Cruz clips because my daughter lives out there in the woods by UC Santa Cruz and when I visited It I fell in love with that place. During my CZcams search your channel came up and have been hooked on it ever since , I wouldn’t normally sit and watch a 40 minute CZcams clip , but there’s something magical and simple about your videos that just keeps me watching till the end . I love your style of speech, so soothing and straight to the point. I just got my Aeropress and guess who introduced it me ? By the way thats exactly how my mom makes her tacos. P.S this my first ever comment on CZcams. Take care Scott.
Hey thanks so much. I’m honored.
Feta Cheese is the Best 👍😋 Yummy,Blk olives, Tomatoes, Avocado 🥑 Yum 😋 Have Great 🌃🌉 Scott ,see you on the next Adventure 👍👌🤞✌️🙌🙏✝️💜🇺🇸🌻💫🌟🌞🌅🌄
Hello Scott how are in October 2023 my doctor told me I had diabetes type two now I have to write down everything I eat I am only allowed 45 carbs a meal it’s very frustrating I love food but now I have to watch what I eat I always cooked at home anyways so I am making chilli tomorrow in wraps with lots of veggies and cheese it’s going to be really good.I love your videos .here from Ontario Canada ❤️❤️❤️❤️🇨🇦🇨🇦😎
Delicious ❤
Thanks!
Thanks so much Jeffrey. I appreciate your support
Man I may have to make me some fish tacos homemade
Crunchy crunchy yum
Yummy 😋 Love Tacos and use left over meat & make Chilli 😋🤩🌻🇺🇸✝️🙏🙌✌️🤞👌👍💫🌟🌞🌅🌄
Caught you late, good to see your new video
love the food vids.. than ks Scott :)
Looks very good I will have to try.
I’m watching this in the early morning I want tacos for breakfast now.😀👍
This was a very good video, keep on the good job,
I was camping in Half Moon on a bluff overlooking the ocean, I had firewood and a clean fire ring. But not lighter, no matches…..no fire. Where did you get that cool lighter or what is it called? Thank you.
It’s an electronic lighter. It works best with gas stoves. Here’s the whole story: czcams.com/video/cB6JjisWbfg/video.htmlsi=8Gk43mxbcW992YmM
That crunch 😋🤤🌮
Doctors are like lawyers they're just out for your money
Those tacos look really good!
Hi Scott.............the Tacos looked awesome. You are a B A D influence on me though!!! I had never seen sporks before. What a great idea! I just had to have one. So, I hopped on Amazon right away. LOL Hopefully, I will use them. I bought a pair of them. Have a great rest of your week. Dick and Gracie
Thanks. It was my intention to encourage you to make tacos. But buying a spork is good too
Just used it for the first time last night. Absolutely love it. @@StaticCamperVan
You can always pick up some plastic gloves so you don't get your hands messy.
They sell them @ the DT, 100 gloves for $1.25. Can't be that.
Maybe you could use some cheap disposable gloves when using your hands in cooking. Do you eat organic also?
Tacos look great!😊
Bon appétit 😋!!!😊
Scott, this is a great video. Can you make a cookbook for the Vanster? Thanks!
Not sure about a cookbook since I’d first need to learn the alphabet. But I do have a Cooking Playlist of videos: czcams.com/play/PL9PWzpL1cZIGusmBAMUe5MzlntZXoECw8.html&si=1emjH9lIlxr3czeF
@@StaticCamperVan ok, I won't hold you writing the English language. Enjoy your videos very much! Keep up the great work.
I was wondering about this, how would meals go for a week, how much power the fridge takes and how much a medium tank of propane would last (summer and winter). Really good video!!
Power and fuel use is going to be different for everyone. But both can be minimal
Great crunch 👌🏼
Hey Caren!
@@StaticCamperVan 👋🏼
How many miles have you put on your van?

I don’t think over processed foods are good for anyone though so simple, whole ingredients are the best and you notice they taste better, they have a settle taste not that mouthful over flavored msg taste.
