    Chicken Biryani Recipe:
    Ingredients:
    For Chicken Masala:
    Cinnamon stick 1 inch
    Bay leaf 2
    Green cardamom 4-5
    Cloves 3
    Black cardamom 2
    Red chili flakes 1/2tsp
    Cumin seeds 1tbsp
    Black pepper whole 1/2tsp
    Mixture of:
    Fennel(Saunf) 1tsp
    Coriander seeds crushed 1tbsp
    Salt 1.5tsp
    Red chili powder 1/2tsp
    Turmeric powder 1/2tsp
    Kashmiri chili powder 1/2tsp
    Ginger garlic paste 2tbsp
    Tomatoes 2 medium chopped
    Green chili 2-3
    Potato 1 medium(Optional)
    Cooking oil 5-6 tbsp
    Yoghurt(Room temperature) 1 cup added with Biryani masala 2tbsp.
    Onion 1 large sliced(Fried Onion)
    Fresh Mint & Coriander 1 handful
    Cover the pot and let the Chicken simmer for 15 to 20 mins at medium to low flame.
    Once properly cooked, add:
    Garam masala 1/2tsp
    For the Rice:
    2 glasses of Basmati Rice(Soaked for 1 hour)
    Fresh Mint
    Cinnamon sticks 1/2 inch
    Star anise 1
    Cloves 2
    Bay leaves 2
    Green chili 1
    Salt 2tsp
    White vinegar 1tbsp
    Boil the Rice for 5-6 minutes and cook 90%, remaining will be cooked in Dum.
    Assembling Biryani:
    Use a large pot for assembling the rice. Usually this is the pot used to boil the rice.
    Add 1/3 of the rice to layer the bottom of the pot.
    Add 1/2 of the chicken masala on the rice spreading it out as evenly as possible.
    Pinch of food color
    Garnish:
    Garnish the rice with mint, chopped coriander, lemon slices, fried Onion and butter unsalted.
    Cover the pot with thick cloth and then add the lid to make a strong seal.
    Dum for 20-25 minutes on medium to low heat.
    Let the biryani rest for 10 mins before serving.
    Serve with raita and salad.
