This is a wedding reception, where the food is generally pan-Indian to cater to the taste of all guests. The wedding food is generally traditional and region-specific, as it is more personalised and restricted to family members. Exceptions are always there of course.

I fully support your view point. I find it very uncomforting to have so many choices, too many varieties only add to confusion and distress, A simple food servered properly and sit and eat with cleanliness and hygiene, that is what should be there. Too many varieties also degrades quality and flavourfulless of individual food items.

Could be an unpopular opinion, but I absolutely hate these live food stalls in weddings. I'm so used to getting my food served on a big spread which made me feel so so special, even as a kid.
Then came the buffets, which was bit of a nuisance but atleast helped in comparatively reducing food wastage and pick as you go didn't create congestion.
These live stalls makes the well groomed guests wait in long lines and we all know we are not particular in following queue ethics, so it usually turns out to be a gigantic cluster fuck for food! Why spend millions in weddings and treat our guests this way!!!

In some of our South Indian weddings, elderly people are still served the wedding meal while they sit on the ground. Served in the traditional style by family members, serving one item after the other. One elderly man would sing some sloka or something and then everyone would start eating. My grandma said once" I am not standing like a beggar, when someone is throwing food into my plate". Not making fun of the wait staff here, who take a lot of abuse by some of these idiotic guests being rude to them etc. But the old style is the Gold standard. It is not even banana leaf, they get served on. It is called "Vistaraaku". Man, I have lived in the US for dog years, and I miss our traditional eating style. In fact, each time I visit India, I even gate crash but eat a wedding meal.
