  • This is a showstopper of langoustines, prawns, squid, and clams paella! One dish that will transport you straight into the Mediterranean coast of Spain, sunglasses on, holiday mood on, over 30 degrees, a light breeze to make it easier (I give you that), vino Blanco to hand and your family around the table. I mean, I am getting excited as I write this! This dish is a jewel of our gastronomy which should be truly celebrated.     Hi Omar, your paella looked amazing. Can you please tell me if fish stock recipe you have is correct? It shows 3 liters for 440 grams but if 3x the rice it should be 1.2 liters. Last night I made paella for 8 people so doubled your recipe to 800g rice to 6 liter stock but unfortunately I think it was too much stock and it was all burned below to a point we couldn’t eat it. Please can you let me know how much stock I need to have for 8 people or 800 gram of rice?

      Hi Jack, sorry to hear about your paella, I hate to hear those stories. The reason mine has absorbed so much stock is because the width of my pan (very large and lots of surface), the highest heat achievable and a very thin layer of rice. If you dont have the conditions I have shown on the vide, then bring your stock down up to 1 litre (if using a smaller pan, a normal home gas burner and adding so much rice that the thickness of the layer of rice when it's cook is up to 3 fingers thick). In any event, when making larger amounts than an original recipe, you must always bring down the liquid, because the conditions have changed you will never be able to absorb that much stock without overcooking the rice and burning it. As well when cooking larger paellas my recommendation is to use less stock and less heat, so it becomes more controlable, running less risks and ultimately achieving a great tasting paella (not as good as when cooking it for 4 but still a bloody good paella). I hope this was helpful for your next go and I recommend you to buy my latest Paella book which you can find online, it will be of outmost help in your quest to mastery. Best

    Paella is not only delicious dish but also have nice story behind it, Paella comes from the Arabic word بَقَايَا, pronounced baqaayya, meaning "leftovers". This is based on the 8th-century custom in which Moorish kings' servants would take home the rice, chicken, and vegetables their employers left at the end of the meal😄😋

      hmm...that could be a possible reason for the name, but I think the real etymology comes from the Catalan-Occitan word "patella" which is a broad shallow pan designed for braising meats like beef or game.
      This word lost the "t" by dialects.
      Also Patella means broad and flat in Latin.

      Come one man, the recipe is great and you can do this in a smaller scale with a steel pan in your stove top. Also for once there is an english speaking video that is not "desecrating" paella. He will get to other recipes. Buenos videos Omar!

      yo so what if he might have 10 paella videos (which he doesn't) first off this is his actual channel so he can upload whatever he wants all the other paella vids aren't on his channel, second this one is a seafood paella which he hasn't uploaded before and its cooked over a grill using wood this time, all the others are on the stove. Next time instead leave a spanish recipe you'd like him to make instead of just crapping on his video for no actual reason.
