    I have made this hundreds of times. I have found that once you put the bottom layer of the crescent rolls in, that if you back that for 5-10 minutes before you put the cream cheese mixture in that the bottom isn't as prone to being soggy.

      What do you mean by 'back that'? Do you mean just let that layer sit for 5-10 mins before putting the filling on?

      I’ve made it many times too (the original Pillsbury version I described above), but it’s never ever been soggy. Maybe just needs to bake longer?

      @@Martina1192 Perhaps. I will try it again without the prebake but I do like the bottom a little crunchy, so I might be just nitpicking.

      @@thefceUSMC just a note that a pan used makes a huge difference. If you use something light, pale color and shiny, it will not be near as nice on the bottom as if you used a dark pan. That’s why older baking sheets that darkened from use work much better for browning than new shiny pans. That could be it too. :)

    So delicious! I found this recipe in an old “Pillsbury Bake-Off” cookbook decades ago, and have made it too many times to count. Always a treat, and have never received anything but compliments.

    I’ve made this and put a cream cheese filling topped with canned cherries before putting on the top layer of dough. After it baked I made a powdered sugar glaze. Really good

    I’ve been making this recipe for years, and we love it too. It’s original recipe from Pilsbury website.
    I also adjust sugar and butter amount as needed. And it doesn’t call for egg in the filling, it doesn’t need it at all. It’s really nice and creamy cheesecake filling which works great as filling in other desserts too (like Danish style pastries, or other puff pastry deserts. Ask me if you want more info.). I also never use a mixer for it, but you certainly can. If the cream cheese is nice and soft, it mixes nicely with sugar and vanilla just using a whisk.
    More tips- spray pan with Pam, no need for butter. Also, no need to roll the top crescent dough for the top (or bottom). Just place it on top straight from the can, as it bakes it will puff up and close all gaps. Use larger 13x9 pan, so it has room to spread (some can be slightly smaller).
    I don’t do so much butter on top, that’s way too much. 2-3 Tbs is enough. No need for a brush either, just even it out across top with back of the spoon.
    Also, you put 1 cup of sugar in cream cheese filling (you can reduce sugar to 1/2 or 3/4 cups too), and on top only 2-4 tablespoons, up to you.
    And I think recipe calls for 1 Tbs cinnamon, so I definitely recommend using plenty. 1 tsp is not enough for me, you want great, strong cinnamon flavor.
    Also, it’s delicious warm and also cold from the fridge. Different people prefer it differently. :)
    Hopefully this helps to simplify it even more. It’s a great dessert that I’ve successfully doubled for parties too, by using a really large cookie sheet and just putting 2 next to each other. Using parchment paper can be helpful too, to prevent any sticking.

      I really wish I would’ve read this about the butter because it was entirely too much. I had to spoon some off of it towards the end! I should’ve taken it off before I put it in the oven, but I figured it would just work like TV magic idk lol

      We love that recipe (the way I described it above, from Pillsbury), and especially with lots of cinnamon, but yeah, totally unnecessary to use so much butter. I’ve also reduced sugar quite a bit in the filling and top successfully, because some people don’t like it as sweet. And like I said, no egg needed, either.
      I updated the comment above with more tips, so hopefully it helps others too.

    As someone who used to make packaging, you wouldn’t believe the work that goes into making even the simplest cartons and boxes, you would never just open a box and discard (hopefully re-cycle) it again without examining it completely 😊 and appreciate the effort it’s taken to get it into your home 😊

I might pop a twist and add a blueberry sauce I make, or even some orange marmalade I made - heck mix it up and make 3 or 4 different kinds!     Whenever I hear/see sopapilla, I always think of fry bread -- like you get at the Fry Bread House in Phoenix or from the Tohono O'odham vendors at San Xavier Mission. I know there are multiple versions. Here in Michigan, a sopapilla dessert is a sweet, soft fried tortilla chips with cinnamon and sugar.

    I used to make a variation of this amazingly easy and very delicious cheese cake, flavored with lemon. It is the same recipe, different flavor. Now I want to make it again. I don't remember if the top was frosted or left plain. So yummy.

    I made Paula Dean's ooey gooey butter cake for a church picnic, and it was confused for a "sopapilla cake." I said nothing but was curious. I guess this is it. I admit it is similar, but my top layer came out toasty, and I sprinkled enough powdered sugar that it honestly resembled a sopapilla cheesecake. I'll try this one next time, lol. Who knows if someone might confuse it for the other.

      Update: I made this and it was super delicious and easy to make with the Pillsbury crescent rolls. I brought it to work and the entire tray was gone in a day. I also used a glass pan to make it and it worked perfectly fine. Thank you for the recipe. I will 100% be making this again. It was tasty both warm out of the oven and chilled from the fridge
