How to select, wash, store and cook vegetables

- ADC Health Risk Management offers care instructions for vegetables - how to select, wash, store and cook these wholesome health foods:
Selection
1. Pick the freshest looking vegetables. No mold, bruises, etc.
2. Find what's in season-it may be on sale.
3. If you cannot find fresh, frozen (without added spices or salt) is best.
Wash
1. Use a drop of unscented castile soap in a bowl of water.
2. Submerge vegetables. Scrub with a sponge for vegetables only.
3. Rinse with running water.
4. Remove outer leaves (cauliflower, cabbage, brussel sprouts). Discard.
Storage
1. Use a plastic bag or a resealable bag to store the vegetables.
2. Wrap the vegetables in a paper towel or
clean tea towel.
3. Use a twistie tie to make sure no air is trapped in the bag.
4. Store the vegetables in the crisper or refrigerator.
Cooking
1. Cut or cube vegetables into bite-size pieces.
2. Using a microwave-safe bowl, transfer vegetables to bowl and add about ¼ cup of water.
3. Add spices if desired. Mix well.
4. Microwave for 5-6 minutes, or until fork tender. Do not overcook vegetables.
5. Enjoy!
