  • Have you ever had the chance to see fresh cocoa pods in their growing trees? This video was shot in Sept-2019 in Colombia. Where I had the pleasure of visiting the cacao farm and research center from LUKER. A Colombian chocolate brand that supports farmers through education.
Ethical and sustainable values for a better future!
They welcomed me (Well, my girlfriend and grandma too!) and showed us around.
I tried to show you some of the tour we did in a fun and educational way
with some of the theory taught by them in regards to growing cacao and its genetics.
In a simplified version, the cacao(Spanish) or cocoa(English) goes through the following process:
    1. Planted and grown in little greenhouses till it's strong to move to steady soil.
    2. Grafted to copy the good genetics of trees already bred by Luker with maximum quality and the 'fino de aroma' seal.
    3. Let grown to fully ripe cacao pods and picked by the farmers at its best.
    4. Cut opened, the white flesh beans picked and put into the wooden boxes from the video.
    5. Then let to ferment for 3-6 days
    6. Placed in the shed or greenhouse with regulated airflow for the beans to dry to a moisture content of approx 8%.
    7. Packed and taken to factories to roast. But that further parts aren't covered in this video :)
Hope you enjoy the video and learn something new about the chocolate-making process.
