    Thanks for the feedback and the URL to your website; which I believe I used about 2 months ago to make a decision on a BBQ grill purchase. I am doing research for smoking thermometers and don't like rushing into such decisions.
    Thanks again!

    The infrared thermometers are great for temping a griddle or pan.

    Bluetooth runs @ 2.4 GHz. That's still technical "radio frequency", the Ultra High Frequency (UHF) band, to be specific. Not sure what distinction you're trying to make there. Most likely, the "RF" device you're so fond of is using technology from the lower unlicensed part of the UHF band (i.e. 900 MHz) which has better capability to penetrate dense objects like concrete.

    Thanks to your video and feedback a month ago i got a thermometer. As a newbie to bbq-ing i've learnt what temps i like my meats cooked to and have now made some of the best steaks, lamb chump chops and chicken thighs i've ever tasted! I've now got a BBQ for 40 people to cook for in 7 days! Can I ask what do you think is the best cuts of lamb and pork to bbq on skewers? Thanks.

    • @AmazingRibs
      @AmazingRibs  Před 6 lety

      Fun question! I am not a huge fan or rotisserie cooking because it applies strong heat to the outside of the meat. That is great for getting the meat nice and brown on the outside, but as the heat works its way down to the center, you get a rainbow effect of temps with the outer layers overcooked and only a small portion in the center perfectly cooked (about 140F for pork, 135 F for lamb to my taste). So I prefer a technique called reverse sear. You set up the grill in two zones, cook the meat most of the time at a low temp in the indirect zone, lid down. This gets the interior very evenly cooked, and then finish it over direct high heat to brown and crisp the exterior, lid up. Sounds backwards, but I explain the concept here amazingribs.com/more-technique-and-science/more-cooking-science/cooking-temps-when-cook-hot-fast-when-cook-low-slow

      Thanks man but i have no choice.. my new partners a greek cypriot!.. I see other videos say it takes 2hrs to cook! I'll have to see how i get on with this new method.

    • @AmazingRibs
      @AmazingRibs  Před 6 lety

      Those other sites a wrong!!!! How long something takes to cook depends on three things things: The temperature of the burners, the thickness of the meat, and how close the meat is to the heat. There is NO way to make such a statement without that info. That's like saying it takes 3 hours to get to Chicago. From where? By plane? Car? Boat? • @AmazingRibs
      @AmazingRibs  Před 6 lety

      If you want to rotisserie pork, get a pork loin (not tenderloin). Season it with my Memphis Dust Recipe and salt. Since I have no idea what type of burner you have or how hot it is, all I can say is cook til it hits 140F in the center (it will still be pink, but it will also be juicy and safe). My guess is, if you are on a gas grill with an infrared rotisserie burner, 90 minutes.
      For lamb, do a leg or shoulder.

    So how do u know when the meats cooked? is it as soon as the middle reaches the right temperature? or does it need to be at that temp for some time?

    • @AmazingRibs
      @AmazingRibs  Před 6 lety

      There is ONLY one way to know when meat is properly cooked, both for safety, and for taste and texture, and that is to use an inexpensive instant read thermometer. It is temp first, but time can be a factor. Food stores energy and continues to rise in temp when it comes off the heat. Steak is optimum taste texture moisture at 130-135F. Chicken is safe at 160F. @Cloppa2000 Před 6 lety

      Thanks for the quick reply but it didnt answer my question, though i think i've found the answer now if you wouldn't mind confirming.. You'd take the meat off the heat as soon as it reaches the required temperature at the thickest part, and then let it rest, Is that about right? Thanks.

    • @AmazingRibs
      @AmazingRibs  Před 6 lety

      I think I did answer you. The COMPLETE answer is in the link I gave you. Cooking is physics and chemistry. Food safety is time and temp. But once you understand the concepts it makes huge sense. If you take the meat off at the target temp and let it rest it will continue to cook and end up being overcooked. i am just wonder i just want a device which will show me the temperature in my incubation box , all this are very costly !! , but cheaper not showing the result properly , here in india W1209 W3001 lots of people are making it , and the do not care about the accuracy ! just follow the online internet diagram and build it from very very third class electronics component to make it ultraa cheep and the highest quality of it will only show the increase of 0.1C but the calibration is +/- 3.5C which is completely kill the embryo , and the lowest quality will show 36C suddenly jumping to 38C i mean counting is bad , so when the counting is bad and messing internal component make it worst throwable to dustbin ,
    for the high quality accuracy is not there and it is not calibrated , so if i have to manually calibrate it , i dont even have the device which i can use for the reference to set the difference

I employ an electrical engineer who has specialized equipment to test thermometer accuracy and read time to verify the manufacturer claims and he also uses them to test ease of use and checks warranties etc. Above is a link, here is is again tinyurl.com/mjjtham that takes you to a page with his annual top 12 Pitmaster Awards for best values. Also on that page is the search tool that allows you to search the more than 150 thermometers he has reviewed and rated.You can search for all the therms of any type discussed in the video.
