    Authentic Horchata Recipe:
    ____________________________
    ~ingredients~
white rice (medium to long grain) - 1 cup/220g
    water - 2.5 cups/625g
cinnamon stick (crumbled) - 1 count
    condensed milk - 1/2 - 1 whole 14oz can
evaporated milk - 12 fl oz can
    vanilla extract/bean paste - 1 tablespoon
    sliced almonds (toasted) - 1/2 cup/110g (optional)
    milk (optional)
    You will also need:
    - medium bowl
    - blender
    - pitcher
    - fine mesh strainer/cheese cloth
    - long stirring utensil
    1. Combine rice, water, crumbled cinnamon stick in a bowl and let sit for a minimum of 5 hours, or until rice grains can be broken with your fingernail easily.
    2. Spread sliced almonds on a baking tray evenly, and bake in a 350 F degree oven for 7-10 minutes, or until golden brown and toasted.
    3. Add rice mixture from step 1 and toasted almonds in a blender and blend for 5 minutes to ensure smoothness.
    4. Strain mixture over bowl to capture all the gritty pieces (a cheesecloth is ideal if you have one).
    5. Pour mixture into a pitcher and add evaporated milk and condensed milk to your liking and stir.
    6. Fill up pitcher with water and/or milk to desired consistency.
    7. Taste and adjust for sweetness. You may need to add additional sugar/cinnamon powder.
    8. REFRIGERATE FOR 8 HOURS MINIMUM. DO NOT SKIP THIS STEP. Let all those flavors mellow.
    9. Horchata will be thick and highIy concentrated, so dilute each serving with more water/milk as desired. Enjoy!

You need to try the original horchata of where it originated from…. Orxata de chufa! The only ingredients you need is tiger nuts, sugar, water, and lemon rinds. Tiger nuts when processed has the consistency of milk and rice blended together and Tiger nuts actually came from Africa and the moors brought it to Spain and horchata as we know it, was born in Valencia, Spain. It has more of a tropical flair to it because of the lemon rind!
I tried the European version before I ever tried Mexican versions since I was born in Germany and tried orxata de chufa as a kid in Italy. I experienced Mexican horchata as an adult in San Diego, California.
It took me years to figure out horchata origins came from Europe, what a coincidence.
