My parents were from the south. My daddy liked salt pork in his greens. We grew up on mustard greens cooked with lots of salt pork, some extra crisco lard, jalapeños. Sometimes mama would fix collards but always with salt pork. She always tore out that tough stem. Now I mostly cook collards - they're easier to wash and prepare. But I use smoked Turkey butt or wings (no salt pork), chopped onion and jalapeños. I never did use ham hocks.

I think the salt pork aka Strickland makes the best collard greens, , brand name Hormel, difficult to find lately, but I will try the smoked turkey necks. Yesterday I had greens made with old fashion hocks, only thing with ham hocks its a hit or miss, sometimes the hocks have lots of flavor, sometimes not.When.I used Strickalin, It was guaranteed. 😊
