Simple sleight of hand when he put it into the envelope. A small slit at the base of the flap would allow the note to look like it went inside, but actually slipped outside the envelope and was held against the back with his thumb. He pockets it after applying saliva to the flap. (Dunno how he got it into the banana though. A hole in the base?)
