Wow! All of this food makes me so hungry. I am 73 years old now. When I was in my early twenties I lived with an Indian family near Kumbakonam South India. As an American it was my first time out of the United States. The family I lived with adopted me as their own member of their family. The food was cooked just the way you are cooking it and was so incredibly good. I have been back to that village several times over the years. All the children grew up calling me Joe mama. I am hoping to make another trip back this coming winter depending on my health. Many of the elders in that village have since passed and others are also getting older like me. Thank you so much for producing this incredible video. I just discovered your channel. My family also taught me how to cook several wonderful items. In India, the curry of this sort is called sambar which is a bit similar but goes better with dosa. Also we peel off the pumpkin outer skin as it tastes bitter. And here, especially in kerala the dosa batter is different. masala dosa is always our favorite ❤️ love from India, kerala

Great cooking video. Loved how dosa can be made faster with powders and yeast to it. I used to do longer way - soaking overnight and used to take 3 cups of rice and 1 cup urad lentil. Very impressive fast recipes. Loved to see village style organic and clean cooking. After years have heard bird chirping.( impossible in West)
