சிக்கன் சுக்கா | Chicken sukka in Tamil
தேவையான பொருட்கள்
மசாலா விழுது செய்ய
தனியா - 1 மேசைக்கரண்டி
சீரகம் - 1 தேக்கரண்டி
சோம்பு - 1 தேக்கரண்டி
மிளகு - 1 தேக்கரண்டி
பட்டை - 1” துண்டு
கிராம்பு - 5
காய்ந்த சிவப்பு மிளகாய் - 8
எண்ணெய் - 2 தேக்கரண்டி
வெங்காயம் - 2
பூண்டு - 3 பற்கள்
இஞ்சி - 1” துண்டு
புளி - சிறிதளவு
துருவிய தேங்காய் - 2 மேசைக்கரண்டி
மஞ்சள் தூள் - 1/4 தேக்கரண்டி
கல் உப்பு - 1/2 தேக்கரண்டி
தண்ணீர்
சுக்கா செய்ய
அரைத்த மசாலா விழுது
தேங்காய் எண்ணெய் - 2 மேசைக்கரண்டி
ஏலக்காய் - 3
பெரிய வெங்காயம் - 2 பொடியாக நறுக்கியது
பச்சை மிளகாய் - 3 கீறியது
சிக்கன் - 1 கிலோ
தண்ணீர் - 1/2 கப்
உப்பு - தேவைக்கு ஏற்ப
கறிவேப்பிலை
செய்முறை
1. முதலில் மசாலா அரைக்க ஒரு தவாவில் எண்ணெய் இன்றி தனியா, சீரகம், சோம்பு, முழு மிளகு, பட்டை, கிராம்பு, காய்ந்த சிவப்பு மிளகாய் சேர்த்து பொன்னிறமாகும் வரை வறுத்து வேறு பாத்திரத்திற்கு மாற்றவும்.
2. அதே கடாயில் சிறிது எண்ணெய் ஊற்றி, வெங்காயம், இஞ்சி, பூண்டு மற்றும் புளி சேர்த்து வதக்கவும்.
3. வெங்காயம் வதங்கிய பிறகு துருவிய தேங்காய் சேர்த்து பொன்னிறமாகும் வரை வதக்கவும்.
4. ஒரு மிக்ஸியில் எண்ணையின்றி வறுத்த மசாலாக்களை பொடியாக அரைக்கவும். அடுத்து அதில் வதக்கிய வெங்காய கலவை, மஞ்சள் தூள், உப்பு, சிறிதளவு தண்ணீர் ஊற்றி விழுதாக அரைக்கவும்.
5. ஒரு கடாயில் தேங்காய் எண்ணெய் ஊற்றி அதில் ஏலக்காய், வெங்காயம், பச்சை மிளகாய், கறிவேப்பிலை சேர்த்து வதக்கவும்.
6. வெங்காயம் பொன்னிறமாக பிறகு அதில் சிக்கன் துண்டுகளை சேர்த்து ஐந்து நிமிடங்கள் கிளறவும்.
7. அடுத்த அரைத்த மசாலா விழுது மற்றும் சிறிது தண்ணீர் (மிக்ஸி கழுவிய) சேர்த்து நன்கு கிளறி, கடாயை மூடி 20 நிமிடங்கள் கொதிக்க விடவும்.
8. 20 நிமிடங்கள் கழித்து கடையை திறந்து வைத்து, தண்ணீர் வற்றி எண்ணெய் பிரியும் வரை வேக வைக்கவும்.
9. கடைசியில் சிறிது கருவேப்பிலை தூவி இறக்கவும்.
10. காரமான சிக்கன் சுக்கை தயார்.
