  • 🌟 An easy lamb comfort food recipe from Persian cuisine, You won't believe how tasty it is. the more famous variety of this dish is Dizy, our focus today is on the delightful Kermani Abgoosht. It is super easy to cook for your family. . So let's cook this delightful dish together! 🤩🥳🥰😋
    INGREDIENTS:
    📜 Ingredients:
    1. 500 g fatty Lamb with bone
    2. 50 g Chickpeas (soaked for at least 4 hours)
    3. 50 g Navy beans (soaked for at least 4 hours)
    4. 50 g Kidney beans (soaked for at least 4 hours)
    5. 6 Small tomatoes (grated or pureed)
    6. 3 large( If you don't eat bread with this food )or any-sized peeled potatoes(Persian add 1 small or medium size potato for each person)
    7. 1 large onion (chopped)
    8. 7 sliced dried quinces or half a fresh one (Beh)
    9. 2 dried key limes (Limoo Ommani)
    10. 2 tsp turmeric
    11. 1/3 cup dried tarragon or 5 sprigs
    12. 1 tsp ghee (optional)
    13. 100 g dried apricots, sweet and sour (soaked in 1/2 cup hot water for 4 hours)
    14. 1 tsp dried powdered savory
    15. 1 tsp cinnamon powder
    16. 8-9 cups boiled water
    17. Salt, cayenne, and black pepper to taste
    🍲 Cooking Process:
    In a pot (copper being the optimal choice), sauté the onion for 2 minutes until translucent with or without ghee, as demonstrated in the video. Add lamb, sauté for 1 minute, then introduce turmeric and grated tomatoes, mixing until the tomatoes change color (be cautious, as tomatoes can burn quickly). Add dried lime and quince, followed by beans and boiled water. Bring it to a boil, cover, and simmer on low heat for 3 hours. Mash the soaked apricots. Check the lamb, ensuring it's 90% cooked, then add peeled potatoes, mashed apricots, and tarragon leaves. Continue cooking until the potatoes are tender. Finally, add powdered savory and cinnamon powder. After 15 minutes, your masterpiece is ready! Separate the meat bones.

    There are two ways to enjoy this feast. The first, as demonstrated in the video, and the second, where boneless meat, some beans, and potatoes are combined(mashed)in a bowl. Serve the luscious gravy in one bowl and the mashed meat and potatoes on a plate. Pair it with Persian bread (Sangak), pickles, yogurt, green onion for the perfect experience.
