Okinawan Sweet Potato Haupia Pie

    For the CRUST:
    3/4 c cold, unsalted butter (1 1/2 sticks)
    2 Tbsp sugar
    1 3/4 c flour
    1 c macadamia nuts, well chopped
    Mix the dry ingredients together, then add nuts and butter, cutting with a pastry cutter until crumbly, then press into pie pan. Place the pan in the refrigerator.
    For the OKINAWAN SWEET POTATO layer:
    1/2 c butter, softened
    1 c sugar
    2 eggs, beaten
    2 c okinawan sweet potatoes (tumai kuru), peeled, boiled and mashed (about 1 big potato)
    1/2 c evaporated milk
    1 tsp vanilla extract
    1/4 tsp salt
    Cream butter and sugar until smooth in medium bowl. Add eggs, then mashed potato, then the remaining ingredients. Spread into the crust but leave a half inch for the haupia on top. Bake the pie at 350F for 30-35 minutes until the crust is golden and the potato filling is lightly browning. Let cool.
    For the HAUPIA LAYER: (do not start until the potato filling is cool)
    1 can coconut milk (13.5 oz.)
    1/2 c water
    1/3 c sugar
    1/3 c cornstarch
    Put the milk and water into pan. Mix sugar and cornstarch together, then add to the liquids. Turn on medium heat and stir constantly until dissoved and thickened, several minutes. Quickly pour haupia over pie evenly and refrigerate for a few hours or overnight. Cut and serve when cooled.
    DELICIOUS!!!!! The 'muffins' tasted a lot like the other mochi that I make. It probably could have cooked a tad longer, but was still very good.
    From Recipetips.com: The Okinawan sweet potato is mainly grown in Hawaii where it was first introduced in the 17th century. It is not well-known on the mainland but some are grown in California. They can be found in specialty markets on the West Coast. It is also known as Tumai Kuru or Beni Imo.
    The Okinawan sweet potato is often confused with another sweet potato that has red skin and a deep purple flesh, which is grown on Molokai. The Okinawan is also often mistaken for the Filipino purple yam, ube, which actually has a closer resemblance to the sweet potato grown on Molokai that has deep purple flesh.

    Thank you thank you thank you!!! I doubled the recipe and made 3 pies and it was an absolute hit! But I boiled the potatoes with the skins on, put them in ice water and peeled off the skins with a spoon. I used a Nutribullet to mix the batter and it came out creamy and lump free. I baked them for about an hour in store bought short bread crust. It was SO good! Thank you for sharing, I will be making these for special occasions from now on. Oh and...my Mother passed last October. She was Okinawan and I know she would’ve loved this pie. :)

    I found a Filipino market by my house yesterday that I never knew existed. They had fresh homemade Empanadas and Haupia Pie. I've never had this pie, so I purchased a slice. I'm having it after dinner tonite. The Empanadas were too die for. They also had these coconut doughy things I also purchased. I found a gem of a store. Now I see your recipe, so I will be making it once I taste mine later. Yours looks amazing!!

    My wife and I lived in Hawaii for over 10 years. When we first moved to Oahu we were out driving one weekend and stopped by the road side at a parked truck with a "sweet potato pie" sign. It was a haupia/sweet potato pie just like yours. So ono!!! An of course, we have never found anything like it since returning to the mainland. Curiously, I just ordered some Molokai sweet potato seed potatoes from a rare seeds catalog, then stumbled across your recipe. We can hardly wait till harvest time. I think the purple Molokai potatoes are similar to the Okinawa potatoes you used. I hope so. Thank you for the recipe!

    Thanks for the recipe; I wanted to share with you a tip that I learned through trial & error: I found that if you bake/ roast the potatoes instead of boiling them, they will taste so much sweeter. Garans!

    This is delicious! I find that rotating mashing and using a mixer helped the potatoes get more creamy without any lumps at all :)

    I served this to my cowkrs for my turn in treat tues! It was a huge hit, i doubled the recipe n make it into a 9x13 pan since a 9" pie was not going to be enough! Thanks a bunch! Luv ur channel! Keep them coming! Mahalo all the way from washington state! :)

    Hope you are doing well....this is still my go-to recipe for this pie......I use ginger snaps and almonds in the crust(gluten free) for my patients that are celiac....and myself, of course. Gotta check'em, yeah?

    I have made this a couple of times already to rave, no, crazy rave reviews! I have used frozen purple yams (available at Asian markets) and they work just fine using your recipe, too. My family prefers the (keebler) shortbread crusts to the graham. But the yams and haupia are what make this dish! Thanks for sharing it. It is insanely delicious! Even to people without an Asian palate.

    I love watching all of your cooking demos, but the Hawaiian/Asian recipe videos are my hands down favorite every time. This sounds so unusual and looks so good. My local farmer's market always has these potatoes - now I know what to do with them :)

    They taste the same, just the colour is different. In the UK you can only get purples ones sometimes in ethnic markets. They are common in south east asia.

    Something very new for me. It makes me think the purple will taste grape. Do they taste like regular sweet potatoes? I want to try to make haupia soon. My brother said he'd like to try some too. We love mac nuts! It's a very pretty "Beth pie!"

    I usually cok my sweet potatoes in the microwave they don;t get as "wet" and you don't have to peel them beforehand... they are super easy to peel when they are cooked this way.

    I live in California and Okinawan sweet potatoes are not easily accessible. I did find an asian market that sold frozen ones - already cooked and peeled. I'm not sure if frozen vs. fresh potatoes make a difference but my batter was not runny at all like how yours is. It was thicker and the potato wasn't quite mixing in smoothly. Also the color was much lighter. I tried making this twice and watched your video over and over to see if I was missing something. I might just have to order some fresh potatoes.

      I'm not sure where you can find them? I bought my starter at a Walmart garden center, so hopefully you can find it there?

      You can find the potatoes in Asian markets. They're usually labeled as purple yams. You can start a plant with one.
