How To Make The Port Au Prince Cocktail

- The Port au Prince cocktail has a long history reaching back to Donn The Beachcomber form the 1930's. Jeff Berry adapted it in his Sippin Safari Cocktail book and I used the recipe from Smuggler Cove by Martin Cate. It is a simple Tiki cocktail with the bold Haitian Rhum, falernum and citrus flavours. And a lot of crushed ice. Try it out, and let me know what you think.

PORT AU PRINCE
1.5 oz/45 ml Haitian Rum
.5 oz/15 ml Falernum
.5 oz/15 ml Lime Juice
.5 oz/15 ml Pineapple Juice
.25 oz/7.5 ml Demerara Syrup
1 Dash Angostura Bitters
1 Dash Grenadine
Method
1. Add all the ingredients to a shker tine.
2. Shake with 12 oz/360 g crushed ice for 10-20 seconds.
3. Free pour into a pint glass.
4. Garnish it with a lime wedge.

I know, I know......
Grenadine is pretty sweet. I'm surprised that the recipe calls for both Grenadine and syrup.
But it does work well in this.
