I’ve had issues with this method for some reason the cops are able to track you, I’ll be hiding in a bush and the helicopter drops swat off right on top of me. I’m out of their sight but they head right at me.

I really don't find it all that difficult to escape the cops in GTAV. It is definitely more difficult if you're on the big divided highways because they can spawn ahead of you with nowhere to turn off, but it's ridiculously easy out in the country back roads. In the city, the hardest part of escaping them is making sure not to drive past the police stations. Otherwise, they spawn far enough away for you to turn away easily enough if you're paying attention to the map.

There is drawback when you tried to sleep in your Safehouses in GTA 4 and GTA 5, this only works when no police present in the area or line of sight, but once any police see you in the bedroom and tried to save, this feature will be disabled until they are cleared from that area. I tried to lose my wanted on both games and they wont work until you clear any polices who still in that area or nobody see you in that area which is reasonable because in old GTA games, this feature was so good that players tend to use it for losing high wanted levels.
3:40 You don't even have to fly, you can just drive to another city or county and one star is gone. It's super useful for losing heat in countryside because there's a lot of small towns and counties that help you get rid of multiple stars quickly.

In Gta SA if you have Barbara as a girlfriend she can let you out of jail free and you'll still have your weapons and armor .

I found in San Andreas you could lose two stars in the rural areas if you could evade the cops long enough. I think that was the limit tho.
