Also known as Goma Dressing (ごまドレッシング) or Wafu Dressing, it also makes for a terrific sauce for cooked vegetables, chilled noodles, or even shabu shabu.     110 grams Japanese mayonnaise (~1/2 US cup)
    80 grams sesame paste (~1/3 US cup)
    3 tablespoons rice vinegar
    1 tablespoon soy sauce

    Hey Marc! Another great recipe. I'm gonna go check to see if you have a ginger dressing video. I'm not sure what dressing they use on the salads at the Tappenyaki restaurants in my city but they are amazing. Have a great week my friend.

    Hey Marc thanks for the Recipe. I I went out found all the ingredients came home and made a big salad and the dressing the dressing was fantastic it's like if I if I could I put it in a cup and drink it that's how good it was LOL but I didn't do that I thought about it but anyways this when it first came out cuz I just now saw it while a couple of days ago really but it was fantastic thanks for the recipe brother you take care and keep keep them coming I'll keep watching.

    I came across your channel while looking for a California roll recipe and now I’m hooked ! While I already have waaay to many ingredients in my home could I sub regular (synthetic vinegar) for rice vinegar in your recipes it will it make too big of a taste difference?

      Hi Seema, welcome to the channel! For this recipe, a plain distilled white vinegar will work fine, but for some Japanese recipes (like sushi rice), you'll want to pick up some rice vinegar as white vinegar will be too harsh.

      Hi Annette, there are two versions of sesame dressing/sauce here. This one is a more modern one that includes mayo (and is more creamy). The more traditional one does not contain mayo and I have a recipe for it here: czcams.com/video/mmgc6oYGLks/video.html

      I basically do this for all lettuce. It made me realize that even the good lettuce wasn't as crisp as it could be. There have been a few rare occasions when lettuce was unrecoverable, but its pretty surprising how far gone it needs to be before this doesn't work anymore. You just need to give it a little extra time for lettuce that is really wilted.

    I chose your most popular video to watch first. Your sesame dressing must taste amazing. I tend to mix oil, lemon salt and pepper so not very adventurous. I must try this one. I do make my own mayonnaise though; is it possible to make the Japanese mayo? If so, what would I use?

      Thanks for visiting and welcome to the channel! For the mayo, Japanese mayo tastes more like home-made mayo (it's more tangy and eggy than the store-bought kind) so your mayo should work fine!

      You're welcome! I'm happy to hear you've been enjoying my videos. Thank you for the suggestions. This dressing is easily made plant-based by using vegan mayo (kewpie makes one). I also have plant-based sauces in my vegan katsu curry, tofu katsu, and vegan kitsune udon recipes. Was there a specific sauce you were looking for? I live in Tokyo, so I don't own any restaurants in CA and I speak/read enough Japanese to get by living here😉

      Japanese meals are traditionally comprised of a lot of small side dishes. A green salad like this isn't traditional but it fits with the traditional way of eating a meal which is why they tend to show up at the breakfast table these days.

    Cutting the top of a tomato is every so slightly easier with your knife, than with my santoku. lol

      That's why I like gyutous, because they're a good combination of all worlds. The only drawback is that the you don't have as much surface area to scoop foods up with off the board like you do with a santoku.

      @@NoRecipes Sasuga ni(!) you managed to read my mind on that one. hahahahaha! I can't remember if you saw my knife video from last summer, but I said EXACTLY that in it, and explained that's why I chose the santoku as my main blade. I like to scoop. (I was comparing the santoku to the western chef's knife, though...which -- unless I'm trippin' -- is pretty close to what a gyutou is.)
      Your gyutou is beautiful, and I always enjoy watching you use it.
      ...but in the end, I'm a santoku guy. An $11 (on sale, at my local supermarket) santoku guy. haha! I'm so ratchet! hahahahhaa

      @@Maplecook Makes sense. On the rare occasion that I'm using a santoku (usually on the set of Bento Expo) I'm always reminded of how nice it is to have a broad blade to scoop..... but I always end up going back to the gyutou (which has a narrower blade than a western chef's knife).

      Hi Carol, you can buy sesame paste at various ethnic groceries. Tahini/tahina is a middle eastern version that will work, but it's made of hulled sesame seeds so it will have a different taste. Asian sesame paste is made with whole sesame seeds so it tends to be more toasty in flavor. You could grind it yourself, but it will require some special equipment (or a lot of elbow grease if you're doing it in a mortar and pestle) to get it smooth.

      That's my own touch😆 As long as you're using grade A maple there's not enough in there to discern the flavor but it adds a nice 隠し味.

      You'll end up with sesame mayo paste if you just leave them out. You could substitute them for equivalents . Read the full post on my site (link in description) for more info on why each ingredient is added which should help you find alternatives in your area.

    How long does it last stored on the fridge?

      Assuming it's in a clean container and it doesn't get contaminated with used utensils, it should keep for a few weeks. I've never tested keeping it until it spoils so I don't know what the upper limit is.
