Remove a few strips until it’s barely buoyant once you get to your desired spot, jump on the lift to sink it into place and you can check how level the lift is likely to be (depends on muck sink under full weight and/or boat weight). If it needs leg adjustments to be level, jump off, pull your leg pins and adjust the height while it is still buoyant, repeat the process until level and then remove the remaining floats.
This process makes it possible to essentially do everything without physically lifting the hoist other than what is required to get it onto shore from a floating depth- you can use a wheel kit in unison, or some old steel dock poles as giant levers to scoot it up onto shore with only 1-3 people depending on conditions.
