Use boiling water from the kettle, takes no time
Yeh I was going to suggest that to!! Or I just use hot water from the tap!! Boils alot quicker!! Use a lid as well which speeds it up!! 🤗👍
Fill the pan with boiled water from the kettle and put a lid on ….voila ! you’re ready to go in a couple of minutes .

Looks lovely, the veg looks very colourful as we eat with our eyes I imagine it was very tasty! My Italian grandmother used to throw a couple of strands of spaghetti at the tiles or glass wall if it sticks it’s cooked, if it walks down it is also cooked, I always use that method ! I don’t like courgettes either so I would have to leave those in the bowl, did you use garlic? Fresh Parmesan is absolutely gorgeous, I think you used fresh it is totally different to dried, I don’t like the dried as it has a different flavour! In Italy these meals are very popular with homemade garlic bread or lovely fresh French loaf, double carbs is not something we eat very much! ❤❤❤

Zoe. I do the veg mix you did but I add carrots and mushrooms into mine as a vegetable pasta sauce adding the normal herbs as well and blitz’s with my stick blender and it comes out looking like bolognese and is very yummy. It makes loads. No mince needed. As you say a great way to get veg into to children.

As long as the spaghetti doesn’t have egg in it then it’s vegan. As a vegan I would happily eat that. I’d probably add some black olives to it too 😊
And for a stand alone entree some cannelini beans or similar

Thanks zoe isabelle for such a lovely meal I think I'd blend it and put a squeeze of tomato puree into it and add bacon or sliced sausage or a half a tub of the smallest minced beef I'd fry it in frying pan with onions and mix in to the tomato mix if you liked meat with it

Mom stir fried courgettes to make their texture more palatable for younger eaters.

Some starchy water from the pasta would help bring the sauce together and allow you to only add olive oil at the end for flavor.

Do you have a spiralizer for vegetables? I have the $12.00 one and I love it! You probably would want a larger one for speed purposes. It’s great to use for zucchini instead of using pasta. Just make your sauce and pour it on. The kids would enjoy watching the process. You can use chicken and Alfredo sauce, Italian sausage and spaghetti sauce, etc. I hope you check it out.😊
