Easy Vegan Pepperoni - Ready in 20 Minutes

  • Let's face it. There are some things that you just HAVE to have. Like pepperoni on pizza. Not to mention PIZZA (that's coming in a couple days). This pepperoni is NOT a source of protein, just so you're aware. It makes a great topping for pizza, sandwiches, etc.
    Ingredients:
    (Seasoning Blend)
    1 teaspoon Smoked Paprika: amzn.to/45L92GB

    Pinch of Salt

    the little pepperoni scraps would probably be good for crumbling and putting in a home made hot pocket or something

    I was following your method closely and wondered when the mixture would become sausage shaped as you did in your sausage video. I was pleasantly surprised when you broke out the cookie cutter. That was the ah ha moment for me and now I will be making these beauties! I wondered if you like Shakespeare as I listen to classical music like Mozart's Non Piu Andrai and found a composer named Roger Quilter who introduced Mistress Mine, a take on Shakespeare's sonnet. Perhaps you might like it.

      It's pepperoni like? But no, it's not got meat, fat or other things that make pepperoni.

    Excellent. You have a new subscriber. I just watched a video about cancer-causing foods by Dr Mike Hansen, and pepperoni was one of them. I was dismayed, because I love pepperoni, but this is going to be my home-made version from now on.

      You can fridge it or freeze it. Should last a good long time.

    Instead of floating it, what if you put a ring of aluminum foil under the pepperoni pan to lift and level it?

      I suppose you could. Might not get as good a contact with the water though. It wasn’t a big deal to swirl it around crepe style :)

    Wheat starch ? Is that the same as VWG ?

      Nope! It’s actually the opposite. This is the starch part of the wheat where vwg is the protein. When you make a washed flour seitan the wheat starch is what you wash away.
