This looks very similar to a recipe I love. A friend brought some to work once and it had mango in it. I sub that with a small tomato. Also hers was grilled corn so I throw corn in a dry pan to get some color on it. Along with the lime juice I add some olive oil.I love making this so much because it gets better with age.

The corn salad looks good, minus the hot peppers. I'd sub the mini green or regular peppers. Yum! 🌽🍈🌮
