There's is a difference between Cowboys, outlaws, city folks and lawmen. A cowboy hat is a functional piece of gear much like a saddle, boots or rope would be.The pictures you showed were taken in a town or city were they would have been wearing their "city clothes". There are plenty of pictures of real old west working Cowboys.

Look at old west photos and the paintings by CM Russell--you will see images of good hats used by real cowboys.
I liked the cowboy movies which had an air of being a bit exaggerated and not quite precisely an exact narrative of the west. It sensationalized, romanticised fiction founded on an era where extreme events which may have happened. Damn the hats, the stories were great fun.
I'm leery of videos that make blanket statements - I've personally seen pictures with dates in the 1870's with cowboy hats, not the derby's. i know it doesn't fit your narrative, but it's probably safer to say that not all cowboys wore "cowboy" hats.
