Chirashi-zushi | Recipe for Scattered sushi. Japanese event meal.

I made chirashi-zushi.
Hina-matsuri is a festival celebrated by families with girls, wishing their daughters a good health and growth by decorating beautiful dolls made solely for this occasion.
✤Ingradients
〈Vinegared rice〉
・2cups(360ml)rice
・40ml Rice vinegar
・ 2tbsp Sugar
・ 1tsp Salt
〈simmered food〉
・4 dried shiitake mushrooms (soaked in 200ml of water)
・80g Carrot
・150ml Dashi stock
・150ml Broth dried shiitake mushrooms
・3tbsp Sugar
・2tbsp Soy sauce
・2tbsp Mirin sweet cooking sake
〈Vinegar lotus root〉
・80g Lotus root
・100ml Dashi stock
・100ml Rice vinegar
・5tbsp Sugar
・1/2 tsp Salt
〈Thinly cut egg〉
・3 Eggs
・1tbsp Sugar
・2tsp Water
・A pinch of salt
・10 Snow peas
・10 Shrimp
・30g Salmon roe
✤Soak the shiitake mushrooms in water beforehand.
When reheating in the microwave, heat at 600W for 2-3 minutes
✤Salt is not included in the amount when boiling
