A real nyonya pongteh with only potatoes. I often find this cooked with mushroom but never in my mum's and nyonya relatives cooked this with mushroom. I never cooked it with mushroom too coz it just spoils the taste.

The Peranakans use more shallots,less garlic..Pound/blend them. The beanpaste now comes in minced bean paste... Saute the pounded shallots n garlic, then add in the minced bean paste.. fry till fragrant then add in chicken n potatoes...also add in some coriander powder...hmmmmm..this is real peranakan cooking, Ah Pa...Palm sugar is added later when the chicken is nearly cooked.
Just made this today, cuz i missed home. Yummy. Since we dont have taucu sold in Korea, so i bought some fermented soybeans (천국장) and added salt to make taucu.
I’m cooking it now but half way through the video , ah pa mentioned “ let’s check the tomatoes if it’s cook “ ahh!!!! Got tomatoes??? I quickly cut some and add in - only To realised it was “potatoes”.
Refering to your follower who wants to buy your spoon! I guess that great so why not get some spoon, cup, glass etc and have it imprinted "Cooking Ah Pa" as souvenir / gift. It is cool right!

Better to use palm sugar for ayam pongteh if u can find.

Ignatia Jessica yes, just use three layer pork and use similar cooking methods. U can blanch the pork before use.
