For kidney, all the parts of calyx and pelvis (renal medulla) need to be removed. Those parts are contacted with high concentration of urea and other body waste fluid inside the body and always have the smells of those wastes. Removing all those parts and keep only the renal cortex is the major way in many places to cook the kidney.
I was wondering about this, I tend to dislike kidney because of the urea flavor I associate with it. I wondered if there is a technique to remove that and here it is. Thanks for explaining! If anyone else knows of any other tips for reducing the less pleasant flavors that can concentrate in organ meats please share them, I'm always curious!
Sheep kidneys are better than beef ones, but, to remove the smell, soak in milk overnight, i personally love devilled kidneys, or a good steak n kidney pie, made from ox heart steaks, delicious....
@@allanwysocki6234I think the shape of cow's kidney making it tough to dissect nicely. In Chinese food, pig kidney is used a lot, and it is more expensive then pork sometimes. Cooking wine and ginger are often used to remove the bad odors (soaking for minutes to 1 hour), but removing the kidney medulla is still the major way to prevent the bad tastes (then combine with cooking wine and ginger to remove the remaining odors).
@Heterogeneity I think the best way of getting rid of urea smell in kidney is soaking them in milk in the fridge overnight. That lactose takes all the bad flavors away and gives it a bit more “milky” flavor itself

When I was little, we had grilled lamb kidney skewers in China and I loved them. And then I almost died.

He is absolutely delightful and incredibly kind, he took a moment to chat with everyone who wanted to meet him which he didn’t HAVE to do.
It’s not every time that people are so awesome when you meet them in person, but Chef Rush was just an all-around stand-up guy and it was an honor to meet him. He is exactly as cool as he seems.
