It is a Turkish saz. But it must have been built on a specific order. Traditional Turkish saz doesn't look like that in phenotype.
It's his own version though, he invented that one
I was wondering that. Reminded me more of an Irish Baglama.
It's a Paul Hathway model - flat back and quite different from the usual type.
That instrument has more in common with an Irish bouzouki than a Turkish saz. It has no quartertone frets, and the shape and size of the body are very different.
How did he tune the strings on this saz?

Sure, He is very talented man. but its not saz. İt sounds very similar, but its not saz.
This does not look and sound like saz.
Looks more like a three course bouzouki. Having no quarter notes either.

I can hear it. Yes, it's different from a piano rendition as you've possibly heard from Sir Elton, but it would also sound different on a six-string steel guitar, or a marimba, or a saxophone.
You need your ears cleaning. I am about as musical as a brick but I heard it.
