2 Reasons. one, behind closed doors allows for longer questioning by the reps, it's more of a deposition. The reps are only given 5 min of questioning at a public hearing which allows the witness to filibuster.

Hunter Biden was subpoenaed to appear for a closed door deposition. He defied the subpoena. There are rules of procedure that the oversight Committee needs to follow. A private citizen coming in off the street, especially one who has been accused of the crime of contempt, has no right to speak at a Congressional hearing. Hunter Biden's attorney gave him bad advice by having him show up unannounced.

Public would just be a political joke as each member yells slogans and Hunter simply says nothing of substance. Closed door allows for members to make questions that are not made for public TV and reduce the ability for politicians to simple grandstand on questions.
You have a deposition prior to a court or " public " hearing in almost 100% of all court proceedings, the deposition is private, multple questions are of a sensitive nature and judges decide if it will be allowed in open hearing, this has nothing to do with GOP, this is the law and everyone else had depositions, the Trump family sat in depositions for days, yet no one cared, why is hunter any different? It's the law....
In a deposition it's mandatory that the witness is under oath, in a public hearing not so much. It's Hunter and his lawyer who are afraid because Hunter is a pathological liar , a chip off the old block.
