In today's video I play Minecraft but if my Twitch chat spells the word "bee" 10 bees spawn, if the spell the word "bolt" I get struck by lightning, if Twitch chat spells "clear" my inventory gets cleared, and finally if my chat spells "dead" I die.

"Dead" is actually so much easier to spell than "clear". "Death" would've been a much better option

When you have your shield up, blazes can still hit you if they are above you because they hit your head, which is not covered by the shield.
Try getting on the same y-level as the blaze, or at least continually jumping so there's less of a chance of getting struck.
