►4 large eggs, room temperature, separated into yolks and whites
►1 tsp vanilla extract
►1 1/3 cups all-purpose flour
►1 1/2 tsp baking powder
►1/4 tsp fine sea salt plus a pinch for meringue
►1/4 cup milk, room temperature
►1 1/4 cup confectioners sugar (125 grams)
►1/2 cup sliced almonds, divided
►1 3/4 cup heavy whipping cream
►2 Tbsp granulated sugar
►1 tsp vanilla extract
►12 oz raspberries, divided (keep a handful for garnish)
►2 tsp confectioners sugar, to dust the top

I am German and this Cake has been part of my life for almost 20 years.
The original recipe was made with fresh Strawberries....
I been making it with both Strawberries and Raspberries, also used Raspberry pie. So delicious.....
Make it into a big sheet cake too. Just double the ingredients.

Well, I also bake this cake with rhubarb wich is precooked with vanilla-pudding-powder so that you can put this cooled-down on the first cake (like a pudding on the cake), then the cream on it and then the second cake. It looks amazing, I'm always wary of meringue though, I made a lemon meringue pie last year as I love it, I didn't want to buy it from the store so made my own but the meringue had gone wet the next day as we couldn't eat it all the same day it was made
