Also, a couple of tips to help with blood sugar according to research reviewed by both Dr. Furman and Dr. Greger, respectively: Eating beans in the potato dish or just consuming beans in the same meal as the dish of potatoes, and chilling the cooked potatoes before eating them, both procedures will lower the glycemic effect.
you can always use white beans to make the dressing to get the same effect

I made this yesterday and added sweet potato and nutritional yeast.
I grew up with Polish potato salad with diced cooked carrot and peas and diced dill pickles. It was by far my favourite food and mum would make buckets of it for our hot Christmas summer lunch. Nice and cool.
Thankyou for the creamy sauce recipe. Now I don't need that oily vegan mayo.
I gave it to my kids for lunch today on a healthy roll with shredded kale, red cabbage and beetroot.

If you add a tiny bit of black salt to the dressing, you can call it mayo!
And you could add some green onions, for colour.
Also, mandoline some radishes for extra crunch and colour - in case you were wondering what exactly can you do with radishes :)

I was JUST about to post this same comment! I just printed out this recipe to try it tonight, and my first thought was to add black salt to make it a little more mayo-ish with the egginess. Not much. I'm wondering how much you would put?
i would add some shred carrots as well. i like a lot of color in my food. makes sure we are getting all the nutrients!

Kidding aside, I like to use cooked chickpeas and avocado instead of cashews. I also use dill _seed_ as I prefer it's potent and slightly astringent flavor, (though sometimes I grow dill weed from the seeds.) And I like to REALLY amp up the mustard flavor, with freshly ground mustard seed. I also use celery seed to further increase the flavor of the fresh celery. I add caraway and/or fennel seeds too, sometimes fresh ground coriander and LOTS of black pepper. And I have been known to add horseradish, omg. I like to crank up the flavors to the max; to me, the stronger a potato salad's herbal and aromatic components are, the better!
And, I find that if left in the refrigerator for a day, the eye-watering level of seasoning mellows out, and the flavors "marry."

Thanks for the easy recipe. I formerly used the same brand of paprika that you used, the hot and sweet versions. I switched to Frontier Co-Op brand's Oakwood Smoked Paprika which has been a total game changer.🧡🧡🧡🧡

Personally, For potato salad, I always boil the potatoes whole, in the skin. When it is ready, peel and cut. Also, I find it's best to add the sauce when the potatoes are still hot. I think you can also throw in a bit of tofu cut to imitate the chopped white of an egg.

Adding the vinegar to the hot potatoes right after they are drained allows the flavor to really soak into the potatoes ...let sit a few mins then stir in dressing. YUM! thanks guys!

I’m glad you mentioned using blended potato as part of the dressing. When I use it, I find the leftover salad doesn’t change moisture and texture the next day.

you are right Dillon, Is a must.... creamy potato salad, I just made this, oh my goodness .... so so so sosoooo delicious, it will be regular for me n my husband, ..... bit changed the recipe..... instaed I added 1 tbsp each of apple cider, mustard n 1tbsp instead of 2, , as I felt it will be sour for me , and 2 garlic cloves, I also added tbsp tahini (my own home made), dill leaves ( love it) and 1 medjool date for my taste ..... of course with my fav.. oat milk, ..... yummy yummy yummy, thanku for this recipe

I make my vegan mayo with silken tofu (cheater than cashews) and vinegar. A small amount of olive is optional. Also, I add pickle relish. Olives and/or capers are also optional.

Great recipe! Thank you! I would save the potato water to use in bread. My German family always put a little chopped apple (treated with lemon juice) in it. That way every once in a while you bite into something a little sweet. Yum!!
Yes! We put apple in potato salad too. It's so good. I'm mostly of German decent as well, but interestingly enough, we learned the apple trick from my mother-in-law...who is Peruvian/Chinese. 😆
