Just in case anyone is curious, the reason they leave that part in on apology videos is because it makes them seem more human and vulnerable. If they start off like everything is normal, it's a signal to you that they are acting like nothing is wrong, even if that's wrong. By doing that little set-up bit, they make it seem like their life is out of wack because of whatever they are apologizing for.
