Whole30 Individual Pumpkin Bakes

  • In an Egg Rut?! This Easy Pumpkin Bake Breakfast will satisfy. It's delicious and versatile.

    Ingredients:
    2 ripe bananas
    4 eggs
    1 can pumpkin puree (not pumpkin pie filling!)
    1 can coconut milk (full fat)
    3 Tbsp Almond Butter
    1 tsp Pumpkin Pie Spice
    pinch of cinnamon and/or nutmeg (optional)
    1/4 cup of pecans, almonds, etc, chopped
    Preheat oven to 350 degrees
    Mix together with a blender, food processor or immersion blender until incorporated.
    Pour into your cupcake molds and bake for 25-30 minutes.

    I made these, they tasted great but were extremely soft, I would recommend the muffin paper cups, they come out too soft

    I've been eats eggs everyday for months and loving them, I thought I would tire of it but I just don't, I'll just have one with my eggs in the morning. Thanks.

    Great recipe! I made them, but added 3 medjool dates soaked in boiling water. Is that Whole30 compliant? And where do you find compliant vanilla??? Thanks!

    I think it's a tough market though because there's a lot of cooking channels by people who do videos full time and have all the "slick" graphics dancing across the screen and all that.
