    Ingredients:
    400g fresh veggies (such as mushrooms, leeks, red onions, parsley)
    100g whole wheat flour
    150ml water
    1 tablespoon olive oil
    Salt and pepper to taste
    50g grated parmesan cheese, plus extra 10g for topping
    Instructions:
    Preheat the oven to 200°C (390°F). Line a baking tray with parchment paper and brush it with olive oil.
    In a mixing bowl, combine the whole wheat flour, salt, pepper, 50g grated parmesan cheese, olive oil, and water. Gradually add the water while stirring until a smooth batter forms.
    Add the fresh veggies to the batter and mix well to coat them evenly.
    Spread the veggie mixture onto the prepared baking tray, pressing it down evenly.
    Drizzle some olive oil over the top and sprinkle the extra 10g of grated parmesan cheese.
    Bake in the preheated oven for 40 minutes or until the veggies are crispy and golden brown.
    Once baked, remove from the oven and let it cool slightly before serving.
