I have a diabetic neighbor that's having kidney trouble. Since this person has a sweet tooth I'm thinking to making up a cookie recipe with oatmeal, blue berries, red cabbage, little bit of walnuts, splenda and sunflower oil. I have a zucchini cookie and carrot cake cookie recipe to use as guide line. Any thoughts?
U r a loving soul. Great idea. I would add coconut or almond flour to your ingredients. I am not sure if splender is a natural sugar replacement. I would add a few dates instead. Your neighbour is bless for having u.
@@Underdeblood23 Thank you for your kind words and suggestions. With Splenda it's a temp over 350 degrees F that has some concerns.
That sounds like a thoughtful and nutritious idea! Oatmeal provides fiber, blueberries are rich in antioxidants, and walnuts offer healthy fats. Red cabbage adds color and nutrients, while using Splenda can help reduce sugar content. Just ensure the recipe balances flavors and textures well. Have you experimented with similar recipes before? Your neighbor might appreciate the effort and the health-conscious approach!

Okay but concerning walnuts…. they’re also high in oxalates which aren’t good for kidney health at all because I as a kidney/pancreas transplant recipient learned I need to cut out walnuts from my diet completely 😮☹️
That's a great point about walnuts! As a kidney/pancreas transplant recipient, your experience highlights the importance of monitoring oxalate intake. Have you found other nuts or foods that work well for your diet and still provide similar nutritional benefits?
