Meat fibers on the rib eye roast run the length of the roast. Cut across the face of the roast, you'll get round cuts that make absolutely incredible jerky. Won't be tough to bite. Cutting with the grain of that eye of round roast, cut thicker slices, but then cut each of those flat slices into strips length-ways about 1/2 inch wide. Then when dried as jerky, you're biting off a short amount of grain, and will be much less tough and chewy.

How do you like that meat slicer? Can you use it with slightly frozen meat? I just recently started making jerky because it's basically the only thing i can eat without getting sick. But I'm so tired of cutting 4.5 lbs of roast every weekend by hand😅
