Winging in surf and downwind bumps- 95kg rider- mostly good conditions: 20-30 kts wind... thinking 850S for my first code foil w/ medium fuse, 150ar stab???.... whatcha think?

First thought would be 850s.
You are on the money with that. medium fuse and 150 tail is my go to all the time.
