Building Stone Walls and Preparing for Winter.

Ingredients
* 1 heaped cup shelled unsalted pistachios (150g)
* ¾ cup whole milk (190ml)
* 2 tablespoon unsalted butter (30g)
* 3.5 oz white chocolate (100g/about 1 cup)
* 1 tablespoon powdered sugar (icing sugar)
Instructions
* Bring a medium sized pot of water to a boil and add the shelled pistachios. Let them boil for 4 minutes then drain them and place them on a clean kitchen towel.
* Fold the towel over and rub the pistachios in the towel to loosen the skins. Separate the pistachios for the skins and discard them.
* Add the pistachios to a food processor with only ¼ cup (80ml) of the milk and 1 tablespoon of powdered sugar. Blitz for around 5 minutes until the pistachios turn into a smooth paste. You’ll need to stop the processor 3-4 times to scrape down the sides. You’ll notice the pistachio turn into crumbs first then it should form into a ball when it’s reached the paste stage.
* Put the remaining milk (½ cup/125ml), butter and white chocolate in a clean saucepan and heat on a low heat until melted, set aside.
* Transfer the pistachio paste to a blender and pour in the white chocolate mixture. Blitz until extra smooth and creamy (you can adjust the consistency with more milk if desired (there’s no need to heat the milk up first).
* The pistachio cream will keep well in the fridge for 2 weeks.

We picked up Albi, Joao and Simao the cats along the way, as well as Diogo the podengo and a flock of chickens.

I love your property. It looks so homey and inviting. You've worked hard to make it what it is. The good thing about the weather is you don't have a burning ban. Granted we've had a number of large forest fires in recent years, but that's the nature of lightning storms in the mountains.
If your laying cement, keep a plastic sheet/tarp handy to throw over the wet cement. Pour your cement, level it, and throw the tarp over it. As long as air can get under to help let the cement harden and dry, you'll be fine. Rule of thumb: if you're getting soaked, give it up.

Your home is so much more suited to offering you proper shelter this fall. What a difference! We built our small home to be both on or off-grid. Jim and I burn wood, both with a 1930 kitchen wood stove and a 2016 air tight stove in the basement, with propane back up. We tied into the grid and I appreciate the convenience, however we can be all right if a winter storm takes out the power. ~ Diane

I'm near Melbourne Australia, supposed to be going into Summer, it has rained for the last 24 hours, but we're expecting 30 degree C day on Tuesday, the weathers all over the place atm.
It feels like Winter, but then gets sudden bursts of warm weather, I feel your frustration.
I'm in Surfers, we just had a 3 day heatwave, then massive storms with incredible lightening 😮 til 3am; yes I sat up to watch it😅 but it still feels like summer will never be the same😢

The winter nostalgic video... Love it! I miss the cold weather of Central Portugal...
Panettone needs to be cooled upside down to stop it collapsing on itself. Push a couple of skewers into the sides so that you can flip the bread and rest the skewer ends on something so it’s ‘suspended’. It’s quite tricky to make at home but we love it so am interested to see how you get on with the pistachio cream. We have a similar craving for a tiramisu panettone we had a few years ago😊

I am so glad I saw this comment, I went over and checked the ChainBaker channel and love it! He has an excellent collection of recipes, easily duplicated at home without needing expensive, bulky mixers. I'm already planning to try the panettone and stollen recipes from his Christmas collections.

Thank you! I think the manual handling advice changes as often as the weather to be honest 😅 I was taught that a solid stance is the most important - the rock was too wide to pick up with a narrow stance. Good job we train back in the gym 😂

You can definitely concrete with some light rain, I have done so without any issues, you just wouldn’t want heavy rain while you are having the concrete go off/set. If you are worried just put a tarp on top and divert water away if you have a serious downpour :) project looks great!

Oh boy!!! You just can't beat an Autumn bonfire. I used to have quite a few in mid Wales ... until we moved/downsized to North Wales a few years back and our postage-sized garden doesn't support such activities. I envy you....

I'm very jealous of your rain. Although it's true that we are able to get ahead with stone work, we have masses of brush trimmings that need to be burnt and it is just too dry (and windy.) This is the second year that we haven't had the usual downpours in November and the water table is way down. Strange, that everywhere else seems to be flooding! Except for a narrow strip along the Mediterranean... Oh well, back to watering the plants and building stone walls!

Wow you have those rubbery tree lichens which are traditionally a very powerful and effective antibiotic and if processed by boiling and leaching are a last resort form of food/ carbohydrates. They also a proof that you are living in a low air pollution zone ;) beautiful!
IIRC, the problem with pouring concrete in the rain is that the rain may get into the setting concrete, making parts of your mix much wetter than you wanted; &/or that it may wash some of the concrete away, leaving you with pockets of too much sand & gravel (unless it washes the sand away, too...). I *think* you'd be fine to pour if you had some way to keep the rainwater & runoff out of your work, but please verify that elsewhere first.

Oh wow, so understandable as to why the authorities have to be notified of any 'bonfires'. What with the eucaplyptus alone, never mind the slightly wet olive branches.......quite a fire! Wish we had such regulations in South Africa (although, sadly, would not curb the arsonists). We are just entering our summer fire season and I fear this one is going to be a doozy. As you mentioned, its always good for the soil and regeneration of plant life, but, devastating for the wild animals.

I would have thought heavy cream instead of milk.
They tend not to use cream so much in Italian cooking.. similar to the gelato being made from milk instead of cream. I’ll keep searching for the right recipe!
