Love reverse flow...meat is so juicy & great flavor. Would never go back to traditional offset.. Reverses flow uses less fuel, too. Temps more even. Great video & pits.
You need a domed end on the end of the reverse flow so when you do leave it to its max you don’t choke it which you mentioned like he would have a Gas bottle design I know it’s not as pretty as a flat end but it’s way more functional obviously I’m talking about the reverse flow the flat and is poor design

Half rack top rack is actually popular. But we do build them with a full upper rack.
