Ingredients for sponge dough (中种面团):
210g (1 1/2 cups) bread flour (面包粉)
1 tbsp caster sugar (细砂糖)
1 tsp instant yeast (即溶酵母)
125ml water (水)
Cover and leave to proof for 2 - 2 1/2 hours
盖好,让它发酵2至2 1/2 小时
Main dough (主面团):
70g (1/2 cup) bread flour (高筋面粉)
60g (1/2 cup) plain flour (普通面粉)
1 tsp instant yeast (即溶酵母)
50g (1/4 cup) caster sugar (细砂糖)
1/2 tsp salt (盐)
1 egg (鸡蛋)
1 tbsp sweetened condensed milk (甜炼奶)
30g (2 tbsp) butter(牛油)
120g grated cheddar cheese (磨碎切达芝士)
Some sugar (糖适量)
For glazing :
1 egg (鸡蛋)
1/8 tsp salt (盐)

Here is some of my notes.
(Using hand)
- Sponge dough try to knead it abt 4-5 mins to maximise the gluten then let it rest 2.5 hours
- Kneading time is 20mins by hand..
It took me 3 tries by hand .. and finally did it.. its soft fluffy and so delicious even after the next day 🥰 and I also added some milk powder

I just tried it and it turned out very soft and nice! Though at the rolling pin stage it could not stretch as well as shown in video, the 45min proofing helped and it turn out beautiful! Thank you for the recipe!

Tried your receipe nice .. normally I use " tang zhong" .. first time use "zhong zhong" I use Russel Taylor bread maker make the dough .. after add the ingredients second time, I also use bread baker to mix it n rest dough .. later I took out for shaping .. n bake .. nice ..

做了几次,效果都很好,糖我只减10g,可以不用减的,因为都不会甜,老师的食谱我们跟着就会成功了,因为我没有面包机,我用手柔面,累了点,不过都成功的🤗

There really is no " best". Either on the bench or somewhere warm.

can you add the gram (g) next time besides the tsp, tbsp?
A teaspoon holds 5 grams and a tablespoon 15 grams.

Mix well, ferment for 1 hour , you can keep it in the fridge overnight
Overnight in the fridge works for most doughs.
