As a new uke player we want to play. Perhaps demo strumming and singing. Then picking and singing etc.

Really great voice. You don't need the Uke!
But, don't teach this with strumming. It just sounds wrong. The uke is like a mini classical guitar. People need to learn picking, and this is one of the easiest patterns, suits this song perfectly. Also very versatile picking pattern for many other songs.
