- Spicy popular indo-chinese recipe of batter fried chicken cubes tossed in chilli sauce.
CHILLI CHICKEN
Ingredients
250 grams boneless chicken, cut into 1 inch cubes
1-2 green chillies, finely chopped
1-2 green chillies, slit
Salt to taste
Crushed black peppercorns to taste
1 egg
2 tablespoons cornflour
1½ tablespoons refined flour (maida)
2 tablespoons oil + for deep-frying
4-5 garlic cloves, finely chopped
1 medium onion, roughly diced
1 medium green capsicum, roughly diced
¼ cup chicken stock
1 tablespoon soy sauce
½ tablespoon red chilli sauce
1 teaspoon vinegar
Spring onion greens for garnishing
Method
1. Put chicken in a bowl. Add salt, crushed peppercorns, egg, 1 tablespoon cornflour and refined flour and mix.
2. Heat sufficient oil in a kadai. Deep-fry the chicken pieces till crisp. Drain on absorbent paper.
3. To make the sauce, heat 2 tablespoons oil in a non-stick pan. Add garlic and sauté for a few seconds.
4. Add chopped green chillies, slit green chillies, onion, capsicum and salt, toss well and cook for 2-3 minutes.
5. Add stock, soy sauce, fried chicken pieces, mix well and bring to a boil.
6. Mix together remaining cornflour and remaining stock in a bowl to make slurry. Add this to the sauce, mix and cook till the sauce thickens.
7. Add chilli sauce and vinegar and mix well.
8. Serve hot..

Ours turned out a little lighter in color and had to add lots of extra sweet chilli sauce buth otherwise another hit recipe. I love this lady!!!!

Same happened. But I guess cookery shows add colour to their dishes to make them visually attractive.
A workable vegetarian substitute is soya nuggets. I am also going to try tofu next.

Nice....but won't adding the fried chicken to stock in the start itself cause it to become soggy instead of crisp texture....Can we add it once the sauce is ready to go and we r ready to serve? Just my silly doubt i guess! I'm sure it tastes heavenly....
