  • Dave Chang is back in the kitchen cooking his Chili Crunch “Carbonara” recipe. This dish, while inspired by the elements of a traditional carbonara, reminds Dave of other dishes like Malaysian Chili Pan Mee or Korean Buldak. He loves showing how versatile our pantry products are through creative yet comforting recipes like this one. He brought this recipe to life with Momofuku Soy & Scallion Noodles, Momofuku Savory Seasoned Salt, and Momofuku Chili Crunch.
    As always, there's no plan, no preparation but this is the essence of weeknight home cooking. Dave's not trying to hit the bulls-eye, just the target.

    The LA burger joint, "Umami Burger," filed a trademark on the word umami and started hitting restaurants nationwide with cease and desist letters. They even sued a family-owned restaurant in Texas called "Umami Mia." The judge ruled that culinary terms cannot be monopolized.

    So you're basically copying from a southeast asian recipe, and then suing Southeast Asians for using a generic name like chilli crunch. You're a real hypocrite, David. Disappointed fan here.

      Those companies he’s going after can just re-label the products as “crunchy chili sauce” and be fine.
      “Crunch” happened to be a word that make significant sales difference from anything else branded as “chili sauce”

    that was so frickin much salt added, along with parm/chili crunch/pancetta... stroke on a plate lol. I get it, salt is important, esp. for restaurant dishes (and noodles!), but so many times eating fusion stuff (like some of the Roy Choi restaurants) or sometimes ramen, udon, etc. recently Jinya and Marugame, or some chitarra at a Cali/Italian spot near me, if I really focus on the taste, the salt level is just too high, whether that's the chef's intention or not. At least for my particular taste, and my blood pressure/water retention lol... and of course I could adjust my own to taste, if I were to attempt it at home.

    Chilipeppers aren´t native to Italy so if Italians claim a dish with chilis in it as Italian it´s Italian fusion of South American origin. They should keep their mouths shut and just let people eat "their" food however they want to.
    Also can you please start shipping Momofuku products to Sweden/Europe please so i can buy them!

      You can also make it yourself its easy. Just heat oil in a pan until about 150 degrees Celsius, then pour it over your chili flakes in stages so it doesn't burn, let it cool. You have your chili oil now. You could also fry some other ingredients like garlic ginger shallots etc untill golden brown and take them out before pouring the hot oil on chili flakes for extra flavour

    I would like to taste that chili for sure. But no way am I paying $150 for a dried noodle bundle to make carbonara. That's the absolute cheapest meal to make with noodles other than bone soup. That's the entire reason it was popular during WW2. It was easier to get pork belly, flour, eggs, and dry cheese to make a rich, filling meal. A good carbonara should cost $8 to make for five to six people. Why is it popular now to take traditionally cheapish items and just mark the price up. I can see the person eating these meals using their amazing Stanley stainless in some special $25 bowl.

    My wife and I was watching the one about the origins of msg and dumplings and we wanted to know if you know anyone else experienced having to ask for bread a normal restaurant, as if we Asians don’t eat bread or something?? We were just curious if anyone else out there has this recurring situation , and we tip at least 20 percent usually , that’s not cool to have to ask almost every time ,

    "I don't know the story of Carbonara". Then he proceeds to give you the history as it is known. 😆 The US troops were supplied eggs and bacon when they defended Italy against the Nazis. In most record accounts, this is how Carbonara was born, when the ingredients were mixed with noodles.

    I ordered all his gear on Amazon in one massive cart (but I prefer Jason’s XFF chili crisp way more). The SALTS were thrown into a BROWN PAPER ENVELOPE, full of BROKEN GLASS JARS!! 👀😖
