Maybe he is using a MUX so he doesn't use 7 pins. Usually that's the case with LED 7 segment displays, but the LEDs switch so fast that you can't see them, the motors are obviously slower than LEDs that's why you see the transitions. It also just looks cooler 😎
Are the motors running all the time? It appears to be - an improvement would be to shut them off except when changing the segments, otherwise it's going to draw a lot more power than necessary and wear out a lot quicker.

Why motors and not servos ?
servos' force isn't needed plus motors are cheaper and more quiet
Guy Maor nah.. servo use ppm not pwm. Thats mean servo can controlled from all digital I/O.
