    SALT FARMING
    Traditionally, salt was harvested from either solar evaporation ponds or rock deposits. Salt evaporation ponds are shallow, artificial basins designed to extract salt from seawater, salty lakes, or mineral-rich springs through natural evaporation (SF Fig. 2.4). As the water dries up, the salt crystals are harvested by raking. Salt evaporation ponds are almost entirely located in warm climates with high evaporation and low precipitation (little rain). Today, seawater is sometimes filtered to remove impurities before solar evaporation.
    The Salt Farm of Occidental Mindoro
    Sea water is the main raw material in producing rock salt. Potassium iodate in 5 % solution is added to rock salt through the process of salt iodization.
    Salt production is produced during the dry season from the month of January to May. Estimated rock salt production is 730,000 bags @ 45 kg./bag
    Estimated area ( hectares ) used in salt farm is 435 hectares.
    Estimated number salt beds in the Municipality of San Jose is 13,469 having the size of 18' x 20 '.
    Occidental Mindoro, once one of the biggest salt producers in the country, is trying to reclaim its old glory. The Department of Science and Technology-Mindor, Marinduque, Romblon and Palawan (DOST-Mimaropa) came to the province’s succor to redevelop the industry through a new technology
    Occidental Mindoro is surrounded by saltwater, making it one of the biggest salt-producing provinces in the country. At the height of its production in 1990, it boasted of producing and supplying about 60,000 metric tons (MT) of the 338,000 MT, or 18 percent of the country’s annual salt requirement.
    Through this, Occidental Mindoro will be able to harvest more salt by ensuring production year-round or even during the off-season, as well as develop by-products, such as gypsum and bitterns, which are seen to generate more income for both salt farmers and salt producers in the province.
