If i remember correctly, it comes from sonic clipping through the floor and being flung to the edge of a level, where sonic's X position has an underflow and takes him to the highest X value.
It's kinda hard for someone like Red to NOT know about these kind of things before anyone else, I don't know how people fail to remember that. Or that making a new video takes time.

Well, usually emulators don't expect you to have a controller, wich not a lot of people have anyway so yeah, it was useful back in the 2000s where PC compatible controllers where scarce. Nowadays it's still not the norm to own a controller but it's much easier to get one and is recommended to do so. An emulator without keyboard (and/or mouse) support isn't ideal either, so I think it's safe to assume most people play on a keyboard when using emulators. (I like both tbh)
