  • Moravian Cakes with cottage cheese and blueberries
    Dough:
    400 g plain flour
    300 g semi-coarse flour
    130 g granulated sugar
    100 g of butter
    400 ml of milk
    1 egg
    2 egg yolks
    35 g of fresh yeast
    25 ml of rum
    Cheese filling:
    500 g lumpy cottage cheese
    2 spoons of granulated sugar
    2 spoons of golden cob
    1 egg yolk
    1 pack of vanillin sugar
    200 g of blueberries
    Sprinkle:
    70 g softened butter
    80 g granulated sugar
    80 g coarse flour
    Put yeast, a pinch of sugar, 150 ml of milk and 3 tablespoons of plain flour in a bowl.
    Mix the yeast, cover with a towel and leave to rise for about 15 minutes.
    Heat milk with butter in a pot.
    Mix the yeast with 150 ml of lukewarm milk.
    Add smooth and semi-coarse flour, 1 teaspoon of salt, remaining milk, 1 whole egg, 2 egg yolks.
    Add 25 ml of rum and lemon zest.
    Knead the dough for about 10-15 minutes.
    Cover with a towel and leave to rise for about 1 hour.
    For the cottage cheese filling, mix cottage cheese, egg yolk, golden cob, granulated sugar, vanillin sugar and lemon zest.
    Mix butter with sugar and coarse flour on the sprinkler.
    For coating the cake, mix 3 egg yolks with 1 tablespoon of oil.
    Roll out the risen dough onto the board.
    Roll out the dough to a thickness of approx. 0.5 cm and cut out circles with a diameter of 8 cm.
    Brush with yolk, put the filling, blueberries and sprinkles, let it rise on the baking sheet for about 15 minutes.
    Bake in a heated oven at 200 degrees for 15 minutes.
