But even without that, Jotaro knew for those tricks he didn't need to be as fast, just enough to throw off D'arby's normally good focus to cause him to miss small and, in reality, trivial details but those trivial lapses in attention made D'arby doubt himself more and more. In theory, even without Star Platinum possibly doing unnoticed time stops for Jotaro, it may well have been able to switch all five cards by the end because D'arby was so filled with dread.
That is the theory but the whole point of SP’s actions was to bluff. It was to always have Darby doubt himself and think that Jotaro maybe did cheat. He saw the speed first hand or basically, saw the cig and drink once it was in Jotaro’s hand, and never noticed anything else. Jotaro would later admit despite his immense speed, he wouldn’t have been able to switch all 5 cards without Darby noticing.

He also doesn't actually need to switch all five cards; his hand turned out to be 6♠️, 8♦️, 10❤️, J♣️, A❤️. He could switch out three cards for the other three Aces; or switch out four cards to go for say the three other jacks and the joker (for five of a kind), or the suited cards above and below whichever card he keeps to go for a straight flush. Honestly D'Arby should've also made him write out his promissory note in English, which Jotaro can clearly both speak and write (remember "Qtaro Kujo?"). Unless D'Arby is fluent in Japanese (which to be fair is not impossible, since he played and beat that one Japanese poker player from whom he won those ten Tokyo properties), Jotaro could've just written "I agree to surrender the soul of my friend 'Tenmei' in the event that I lose"; or even, should he be so bold, "the soul of ディオ・ブランドー" (a.k.a. 'Dio Brando' 😅) and D'Arby would've been none the wiser.

Simple awnser to that, D’arby assumes that since Jotaro is related to Dio(Johnathon’s body) he probably has a similar stand to Dio. After he played and lost to Dio so it’s safe to assume he figured out his stand’s power.
