It would be nice to see this in a Sixthreezero Two Front Wheel Electric Bike configuration but as a recumbent. It would probably be much more stable for her... at least it seems that way.

She might need a crank length adjuster on the left side with a heel retainer for safety.
Would recommend addressing that with someone experienced in adjusting bikes/trikes for handicapped riders.

The only piece that folds is the handlebars, which fold down. I'm not sure if it could be a checked bag.

Phone rep said baskets are not available on this model which is a problem for most physically challenged who no doubt need a place for storage.
